Easy and Delicious Chicken and Rice Casserole

I made this dish late last night for today's dinner. I followed the recipe as is for the most part with 3 exceptions...I used drumsticks which I lightly seasoned and slightly browned in olive oil and a pat of butter. In addition to that, I also used 1 and a 1/2 cups of saffron rice and cut the onion soup mix down to 1/2 of a pack. As others have said, it is a great base/starter recipe and on that note I rate it a 4. For ease and simplicity I rate it a 5. As for taste I rate it 3.5 stars. The taste was just ok, nothing spectacular to write home about. I'll wait to see if my finicky 8 year old likes it. I will definitely make this again, but I'll tweak it to make it my own. I stumbled across this recipe looking for ideas using cream of chicken soup, chicken, and frozen spinach. I found several recipes and decided to try this one first. Btw, my dish didn't turn out salty, probably because I only used 1/2 a pack of onion soup mix and extra water for the extra rice I added.

Grandma's Egg Custard Pie

Thanks for this quick and easy recipe. I made this last night and I was not disappointed. I followed it exactly as written with the addition of the extra yolk leftover from the egg white. The custard was smooth and silky on my palate, nor was it heavy in texture. However, I still feel something is amiss. Still, it does taste good; next time I will cut back on the sugar somewhat.

Manicotti Alla Romana

This was a good base recipe, however, I did make several changes most notably substituting italian sausage (2 lbs)for ground beef, omiting the chicken bouillion altogether, fresh spinach in liue of frozen, increased onion and cloves of garlic, extra italian seasoning/basil/oregano; my sauce was made with butter, sauteed/minced garlic and onion, flour, salt and white pepper to taste, and 1/2 cup of fresh grated Asiago cheese.

Creamed Chipped Beef On Toast

I haven't made this recipe yet, but I've been making CCB forever. I use packaged dried beef most of the time but have also purchased it at the deli counter. I've never used cayenne pepper in my recipe, but white pepper...will definitely try this. As I said I've been making it forever...I sautee the beef in butter and add flour...make sure everything is well coated and then I add cold milk frequently stirring and making sure I have the right consistency. Even though I don't know the exact measurements it comes out perfect every time. We like it on toast points, sometimes we have it for dinner and serve it over jasmine rice or pasta.

Delicious Feta-Crusted Salmon

I made this for dinner tonight and it was delicious. I wasn't sure what to expect as I didn't want to taste the mixture that is layered over the salmon. I waited until it was done...cooked to perfection...it was a rather thick and lengthy piece of salmon. I let it cook for approximately 50-55 minutes. I couldn't make up mind what to serve with it. In the end, I decided on buttered and herbed pasta and a caesar salad. Hubby thought it was delicious. Thanks for this great recipe.

Salmon Salad

I made this dish @ 2am this morning. I folllowed the receipe exactly with the addition of hard boiled eggs and elbow pasta. I added extra mayo, yogurt, etc to account for additional salmon, pasta and eggs...I like to incorporate the egg yolks into the mayo/yogurt mixture as it adds extra flavor. I was going to make tuna n' macaroni salad which I really didn't want...the salmon I keep on hand was a welcomed susbstitute and a nice change from our usual canned salmon meals. I make salmon croquettes, salmon cakes, scrambled salmon with grits, salmon and seafood patties, and I sometimes just like to eat it as is straight out of the can. This time I was desperate for a change and it turned out well.

Garlic Prime Rib

I cooked a 5# prime rib for our Christmast dinner last night using this recipe, it was superb! We also had the usual fare...slow roasted turkey, macaroni and cheese, oven rosted potatoes, and a mixture of greens. I saved this recipe for prime rib in addition to the salt encrusted version, but in the end I opted to work with this recipe. Thanks for sharing this simple yet delicious recipe; Happy Holidays to all.

Chicken or Turkey Tetrazzini

I made this recipe 2 weeks ago. I followed the recipe exactly with the exception of the pasta and left over turkey...didn't have spaghetti on hand so I used elbows...no left over turkey so I cooked a turkey breast just to make this dish. Hubby thought it was delicious. It just didn't knock my socks off though.

Shrimp Francesca

I made this for dinner tonight. While my 7 year old did not like the artichoke hearts, but loved everything else about the dish, hubby thought it was excellent. We've been married for a long time and I'm a good cook, and he said it's one of the most delicious dishes I've ever made. It' been an allrecipes day here as I've cooked 2 meals today all courtesy of allrecipes. Thanks for this delicious dish. BTW, I doubled the recipe to get 8 servings...leftovers for tomorrow.

Shredded Potato Quiche

WoW! I just made and ate this quiche...ate a slice that is. I made a couple of substitutions with the cheese. I used Asiago, sharp cheddar, and parmesan. I suteed mushrooms and onions, then added freshly grated potatos. After they were browned I added the mixture to my pammed pie pan. I also substituted scrapple as I had no more bacon or ham. While browning the hashbrowns the scrapple was cooking in the oven. I aso added 2 more eggs as 5 left a very thin layer over the other ingredients. It turned out great! Absolutely delicious. Thank you for this easy and dellicious recipe.

Mahogany Chicken Wings

These wings were really tastey. However, I couldn't bare to use the left over marinade as a dipping sauce...much too sweet. Although to my surprise, that extreme sweetness did not over power the wings I would make this again...but altered by way of cutting down on the honey and molasses. I loved the color of those wings. Thanks for the recipe!

Grilled Peanut Butter and Jelly Sandwich

Update: i finally took the plunge and made this simple yet delicious classic with a twist. If you are dieting and cutting back on fat and cholesterol, this isn't the sandwich for you. I love butter and have a preference for my grilled cheese and grilled pbj to be grilled with butter. I know it's decadent, fattening, unhealthy...but you only live once. I haven't made this yet, only in my head. I thought I came up with a new twist on an old classic pbj. I also thought it was kind of crazy, but now that I see so many others have eaten it, I don' t seem so crazy anymore.
