Chinese Almond Chicken Stir-Fry

This is a good basic Chinese recipe. I used beef instead of chicken since that is what I picked up at the meat store today. I added the red pepper flakes as suggested - if I hadn't it would have been WAY too bland for me. So kudos to whoever suggested that! I also added bean sprouts - they added some good crunch which I like. I used sesame oil instead of peanut - will try again when I have peanut oil. Instead of rice - I used Udon noodles which was amazing with this recipe. Play around with the veg as much as you like - you won't go wrong! oh-- I also added some garlic!

Brown Sugar Pecan Refrigerator Cookies

I have made this two years in a row for my Christmas baskets. They have an excellent taste but the dough is very crumbly. I will be making more in a week or so and will add the extra egg as someone else recommended.

Delightful Apple Spice Muffins

OMW - these are so good. I added about 1 cup of diced apple, 1/2 c. walnuts, and about 1 tsp each of allspice and nutmeg. They are moist full of flavor. Will make again!!

Roasted Beets 'n' Sweets

I just made this for the second time and it was still as good as I remember it. I like onion and garlic - so added both fresh - and it was not overpowering. I also added some fresh rosemary and next time will add more. As many people have said that serving it with some goat cheese makes it even better, it's like the icing on the cake to me. Cut the potatoes and beets into smaller pieces for it to cook faster. I also lowered the heat to start and then bumped it up for the last 20 minutes. Can't go wrong with this recipe!!

Downeast Maine Pumpkin Bread

This tastes just like the Starbucks pumpkin bread. Excellent. I followed most of the suggestions - leaving out the oil and substituting it with unsweetened applesauce (which is what I normally do) and substituting the water for OJ. I did substitute one cup of white sugar for brown sugar. When I make this again, I will probably cut the sugar down to 2 cups total. I also added the frozen chocolate chips. My friends that live down the road are my guinea pigs and they loved it!

Banana Muffins II

This is a great recipe meaning it is very easy to make. I followed the advice from other cooks by adding 1 tsp of cinnamon and about 1/2 cup of raisins. I also replaced the butter with applesauce. These muffins are moist and full of flavor. I will make again!

Elk Chili

I was looking for a recipe using a crockpot because of the simple fact that I do not have a stove right now. I also didn't have any meat thawed out - and had been given some elk that had been canned. This is the perfect recipe. It is spicy and slightly sweet which doesn't overpower the meat or beans. I will definitely make this again. The only change I made was that I used a can of fire roasted tomatoes with green chilies. If you decide to make this recipe, you will be making an excellent choice. This will become a family favorite.

Herb Roasted Pork

Excellent! I followed the recipe almost exactly - reduced the amount of soy sauce and increased the brown sugar. It was tasty but I will add more herbs next time and reduce the soy a bit more that way the herbs are not overpowered. I will make this again.
