Hmm...what to put here... - I'm an army wife. My husband and I have been together for almost 7 years and married for 5 of those. - I'm a new mom to a wonderful, handsome, energetic 9 baby boy. - I'm a total bookworm. I'll read just about anything I can get my hands on. E-books and the like are fine and dandy but I'll take paper any day. Ah! Love that book smell! - I love to cook! Cooking is pure bliss for me. It's relaxing, fun and gives me some much needed "me" time. Creating a dish that tastes great is very satisfying, but the process it takes to get there is what really de-stresses me. I find cooking to be very cathartic.
My favorite things to cook
Anything really. I'll attempt just about anything once, with the exception of shellfish...*gasp*...yes, I know. What can I say? I don't really like it.

Beer Braised Irish Stew and Colcannon
Delicious! I think next time I will add more carrots and onions to it and maybe even throw in some turnip. I might add some beef stock to it next time as well so there is a little more gravy. I used more garlic than it called for and a little less worcestershire sauce so it was more to our tastes. I didn't microwave the cabbage because there is really no need. I just put it in with the potatoes for the last 5 or 10 minutes and strained it all together. It was fabulous! Definitely one of our faves!

Beth's Spicy Oatmeal Raisin Cookies
I'm still giving these 5 stars even though I altered it slightly because I think they still would have been fabulous! Instead of 1/2 cup of butter and 1/2 cup of butter flavored shortening, I used all butter. I also added more raisins because that's how we like them. 10 minutes was absolutely perfect for these in my oven. My whole family and I agree that these are probably the best oatmeal raisin cookies that we have ever had. Thanks for the recipe!

Three Cheese Garlic Scalloped Potatoes
I am only giving this recipe a 2 because the flavor was great...if it wasn't for that it would be a 1 star. The time and heat is WAY off. Most scalloped potato recipes have the temp at 400 or 425 so I should have known that something wasn't right with a temp of 325. After almost 2 hours they were STILL not cooked all the way through and I followed this recipe to the letter. The only thing I can think of is that maybe it would cook all the way through at that temp in a convection oven?? I don't know. I will definitely have to adjust the temp next time.
