Curry-Coconut Shrimp

Delish! Served it over a bed or rice noodles. However, it didn't seem like there was enough sauce with using only 1/2 cup of coconut milk. I added the whole can plus 1/2 cup of water. Unfortunately for my husband, though, it was a bit spicy (I'm not complaining). No big deal - he just topped it with some sour cream. ;)

Grandmother's Buttermilk Cornbread

Awesome! Used a muffin tin instead of 8 x 8 square pan. Also, tried to make a bit "healthier" by using fat free milk, egg whites, and olive oil in place of the butter (used 1/4 cup olive oil). Turned out great...a moist, dense bread perfect for scooping up that extra bit of chili at the bottom of the bowl. Would be great with fried chicken, too! My family loves this recipe!

Butternut Squash Ravioli with Sage-Brown Butter Sauce

These are very good and easy to make. I do omit the cinnamon and allspice, though because it seems to "desserty" with those ingredients and has a weird taste with the sage butter. I also tossed about 1/3 cup chopped walnuts into the squash mixture. My husband, who is not a fan of vegetarian meals actually likes this dish. In so far as people having issues w//wonton wrappers... I used the smallest ones, toss in boiling water for just a couple of minutes - never have had an issue w/breakage, leaking, mushy ravioli, etc.

Waikiki Meatballs

Delicious! I substituted the ground beef w/ground turkey, used oatmeal instead of the crackers, and 2 egg whites instead of 1 egg and it came out beautiful! Our son (who is sooo picky) even liked it!
