Beefy Cheesy Pasta

We really like this! I make it exactly as written and it goes over great with my family of 5 (3 small children). I do use Velveeta since that is what we usually have on hand. We do not eat boxed dinners, and I was looking for some quick ideas for practice nights. We have had this many times and will continue. Thanks!

Coconut Cream Pie I

This is incredible! I have never made pudding and was nervous I would mess it up, but it went great. It is so smooth and creamy. I added coconut and will use this for a homemade coconut cream pie. With 3 kids, this will definitely stay on my quick and easy snack list.

Pan Fried Catfish Filets

Absolutely delicious! I only eat fish if its fried and I always pan fry with EVOO. This was wonderful. I love garlic and added about a teaspoon or so of powder to my italian bread crumbs (which I prefer over cornmeal on my fish). It was a touch spicy so I may add slightly less cayenne next time. I've never made spicy fish before but will definitely be making this again. I used this on Tilapia since that is what I usually buy.

Oven Fried Parmesan Chicken

I have made several chicken parm recipes and never found one we really loved, until now. This was so very good. I followed the recipe exactly but used panko bread crumbs for the extra crunch and melted a slice of mozzarella on top before serving. My kids said it was the best I've ever made and my hubby loved it! Thanks

Chocolate Chocolate Chip Cookies III

These are very yummy! I had white chocolate chips so I used those and added 1/4C of cocoa powder for a little more chocolate.I did have about 1/2C chocolate chips to just add in. We decided we liked them best with the powdered sugar but would definitely make them without. They baked at 350* for 12 mins and were perfect!
