Beefy Cheesy Pasta

We really like this! I make it exactly as written and it goes over great with my family of 5 (3 small children). I do use Velveeta since that is what we usually have on hand. We do not eat boxed dinners, and I was looking for some quick ideas for practice nights. We have had this many times and will continue. Thanks!

Coconut Cream Pie I

This is incredible! I have never made pudding and was nervous I would mess it up, but it went great. It is so smooth and creamy. I added coconut and will use this for a homemade coconut cream pie. With 3 kids, this will definitely stay on my quick and easy snack list.

Pan Fried Catfish Filets

Absolutely delicious! I only eat fish if its fried and I always pan fry with EVOO. This was wonderful. I love garlic and added about a teaspoon or so of powder to my italian bread crumbs (which I prefer over cornmeal on my fish). It was a touch spicy so I may add slightly less cayenne next time. I've never made spicy fish before but will definitely be making this again. I used this on Tilapia since that is what I usually buy.
