Moist, Tender Spice Cake
I decided to use this recipe after much searching for a decent spice cake recipe with what I had in house. I followed the recipe as written. Although the flavors are great, the spices work wonderfully, none too overpowering, my cake was not as moist as I had hoped. I too had the issue that a few mentioned, the thick dough clogging my mixers. I used the method described in the recipe as apposed to the traditional method in the hopes that this would prevent and over mixed cake. However once all the ingredients were in, it did pour fine. This one needs some tweaking, I'm thinking the 1/2 c. of applesauce that one mentioned would do the trick. Till then I'm still on the hunt for that "just right" spice cake recipe.

Louisiana Sweet Potato Pancakes
I went super decedent with these by adding some candied pecans on top. The only modification was I used cloves in place of the nutmeg (I find the flavor to usually be overpowering). I was in the mood for some soul food, and these hit the spot. I'd be interested in serving these as a savory dish sometime. Has anyone tried it? Perhaps with some sage butter or something of the like, I could see them working with a protein... just a thought :) I will be making these again!

Chewy Coconut Cookies
Loved these cookies, 10 minutes and a couple on the pan was the time I needed to make yummy chewy cookies. My man loves em, and I think I ate about six just as the next batch was coming out of the oven. A keeper for sure!
