Jay's Signature Pizza Crust

Reviewed: Jan. 21, 2011
I found this to be more like a hand-tossed type crust as opposed to pan crust. Having been my first pizza crust, I loved it. Lesson learned, you have to press the dough out, not roll with a rolling pin. Making it for 2nd time today. Thank you for the recipe.

Fluffy Pancakes

Reviewed: Nov. 6, 2010
I researched "fluffy pancakes" and this showed up. First question I ask myself is why I didn't look here first! Anyway, I wondered what purpose the vinegar provided, but reluctantly proceeded. These were very good. They were not as fluffy as I hoped but I think I will chalk this up to "maybe I need get some new baking powder". Thank you for the recipe.

African Chicken Stew

Reviewed: Oct. 24, 2010
Could not find garbanzo beans, so used black beans instead. Overall taste was very very good. I cooked this in a crock pot after spending 20 minutes to brown the chicken. I'm not sure if the crockpot is what gave the chicken dryness, but next time, I will add more chicken broth to ensure more of a soupy texture. Will make again. Thank you.

Basil Tomato Soup

Reviewed: Sep. 23, 2010
My daughter came home ranting and raving about the schools tomato soup. She begged me to make some. I personally have not so fond memories of being forced to eat tomato soup til I literally could not hold my food down. So I thought to make her happy, I would attempt. I ate it but she mentioned it wasn't as good as the schools. That is surprising because I don't recall school cafeteria food being good at all. She wasn't impressed nor myself. Appreciate you sharing, but not for my family.

Pumpkin Cheesecake I

Reviewed: Sep. 23, 2010
First and foremost, I hate, hate hate pumpkin or sweet potato. Having tried a pumpkin cheesecake roll several years ago and loved it, I knew with the cream cheese, I couldn't go wrong. My husband loves 4 layer delight. This seems very close to that only with pumpkin instead of chocolate. So far 3 of my 5 family members have tried it and all like it. If it weren't for the roast, potatoes and green beans, I might have room for a serving of this but will have to wait til tomorrow. Couldn't resist a bite trying it though and it's fabulous. Definitely a keeper for a "not so pumpkin person". Would like to add that I made my own homemade spice seasoning and didn't have allspice, so that was eliminated. Great job!!

Whipped Cream

Reviewed: Sep. 23, 2010
I gave 4 stars because really this isn't as sweet as I'm used to with Cool Whip. Although it is very good. I actually used this homemade recipe with one of the pumpkin recipes on here and it turned out scrumptious. I would definitely make again, but add more sugar. Thanks for sharing.

Hash Brown Egg Bake

Reviewed: Aug. 31, 2010
I prepared this without paprika and added green onion, more salt and white pepper. I didn't have enough shredded cheese so I used sliced sandwich cheese. We topped with homemade salsa. Husband said it is good and taste light. Overall, everyone loved it. I will make again but use sausage and maybe 1/2 pound more than a pound. Thanks for the recipe.

Creamy Ham and Potatoes

I used russet potatoes and added 2 more potatoes. This was not very pleasing to the eye but tasted awesome! Everyone loved it. Will make again!

Burrito Pie

Reviewed: Jul. 31, 2010
My family really enjoyed this! Husband loved it! I thought it to be a little bland so I had to add salt. I will definitely make this again but add in season salt possibly and next time I will add lettuce, salsa and maybe sour cream. Otherwise, very good.

I thought I'd have leftovers, but no. Everyone loved it. I was short 2 cups of chicken broth and used water. Turned out great.
