Baked Cod with Roasted Red Pepper Horseradish Sauce

Made this tonight with Halibut. The only change I made was to skip the cajun seasoned snack mix because I didn't have any. Did bread crumbs instead but think I'll skip them next time too as they didn't really add anything. Tasted the sauce before cooking and it was pretty spicy... but the cooking seemed to tame it down. The finished dish had a nice horseradish flavor but wasn't too spicy at all, and we have pretty mild taste buds in our house. I will make this again but may add a few extra spices (maybe some fresh garlic and minced onion in the sauce) to give it some depth. I used the horseradish sauce from this site and it turned out well. Made a little less than a full cup but that seemed to be enough for the amount of fish I had.

Deer Chop Hurry

Followed the recipe pretty close: I added a little extra water along with some garlic and Worcestershire sauce. The result was extremely flavorful just not something we liked very much. I used moose meat and it definitely disguised the flavor of it so if you are looking for a recipe that does that this one will be a winner. However, in my opinion, it just ended up tasting like a strong, ketchupy, bbq sauce. I don't want to give it too poor of a rating because the recipe itself, I think, is something that a lot of people may like, just not us. Also, mine was done and super tender after about 3 hrs on low in the crock pot so definitely watch the cooking time.

Char Siu (Chinese BBQ Pork)

Not sure what went wrong. I followed the recipe exactly except I substituted cooking sherry for rice wine do to no availability and cooked in the oven as it's winter in Ak and grilling was not an option. I marinated two pork tenderloins and cooked the first one after two hours in the marinade. It wasn't very good and the flavor tasted way off. So I let the second tenderloin marinate over night thinking maybe that would help. It was even worse. I usually like homemade asian recipes and I love bbq pork so not sure where this recipe went wrong as others seemed to really like it. We will not make again.

Manuela's Fish Cakes

I think you could very easily spice up the flavor with a few extra ingredients but you can't do much about the texture without a major recipe overhaul. For those of you who do like these, try making the patties then refrigerating before dipping in egg and breadcrumbs to cut down on the mess.

Shrimp Salad with Red Chile Mayonnaise & Blue Corn Chips

This recipe it ok... not great but not bad either. All the flavors mesh well, just don't leave anything out! This is one of those recipes where all the ingredients are necessary for it to be good. I'm not sure what could be done to improve the recipe, nor am I sure anything should be done. It may not get rave reviews but neither does anyone complain and it has the benefit of being easy (and quick) to make.

Cranberry Zucchini Bread

I love this recipe and make it quite a bit. Since I always have tons of extra zucchini at the end of harvest I shred and freeze it in two cup portions so I can make this bread all winter. It is kind of a sweet bread and makes a nice dessert or party appetizer. This recipe will make 5-6 small breads if you want to make and give out as gifts or freeze for later. I only made a couple of changes to the recipe. I use two full cups of zucchini and cut the oil down to half a cup. I couldn't even notice the difference. Instead of cranberries and walnuts I use Alaskan blueberries and pecans. The blueberry zucchini combination is amazing! Enjoy
