Tortellini Chowder

Very good and hearty on a cold evening. Some reviewers have been put off by the tortellini/potato combination. I agree, it's unusual, but it was interesting. I mixed the flour with chicken stock to cut out a bit of the fat and used olive oil in place of the margarine to sauté the veggies. I also used canned green chilis and chipotle chili powder (because that's what I had in the pantry)--very flavorful. I "pinned" this recipe so that I will have it on hand to make again.

Oven Brown Rice

I am trying to gradually wean my family onto more whole grain products, and this rice was a big success! I omitted the butter and didn't miss it (and we are a "Paula Dean" kind of family). I also substituted fresh garlic for the garlic salt and added some mushrooms. As to the cooking time that some of the other reviews have mentioned, mine was perfectly cooked in an hour. Will definitely be making this again!

Sausage, Peppers, Onions, and Potato Bake

This is a really good, casual Sunday night dinner. Like some of the other reviewers, I added carrots, garlic and mushrooms. Husband and daughters liked it.

Cajun Potato Soup

This was a very delicious, comfort food soup. My family asked me to put it in the "make it again" book (which is actually a high compliment). I did use creole seasoning instead of Italian, beef stock instead of chicken (only because that's what I had on hand) and half and half instead of cream. I also added celery to the onions and garlic. Yum!

A Farewell to Basil Fettuccine

I have wanted a pasta attachment for my stand mixer for quite some time. The abundance of basil in my garden encouraged me to buy one. I'm SO glad that I did. This recipe was so easy and delicious. My family loved it and asked me to plant more basil so that we can make pasta to freeze through the winter! I didn't want the sauce to overpower the delicate herbed flavor of the pasta (I made fettucini), so I sauteed some shrimp in a bit of butter, olive oil, one clove of garlic and a sprinkling of Old Bay seasoning--perfect!!
