Mushroom Chicken Piccata

Pretty good recipe. However I removed the chicken breasts and put them in the broiler after they were sufficiently browned on the outside (but still need some cooking on the inside). I put the chicken on a plater and spooned the sauce of it. I wanted to keep the chicken as crispy as possible!

Pineapple Fried Rice II

My family loved it. I substituted 3 cups raw minute rice and 3 cups water. I might add some additional spices next time and twice the amount of pineapple. (I have to admit that I didn't measure most of the ingredients!)

Delicious Ham and Potato Soup

Mexican Shepherd's Pie

A nice, simple recipe good for a weeknight. Instead of tomatoes, I added 3/4 can of tomato sauce (didn't have tomatoes) and no water. I think the olives and cheese on top did give it a little more visual appeal. If I made it again, I would add 2 boxes of cornbread or make it in a smaller pan, 13x9 was a little too big for the cornbread to cover the pan thoroughly.

Christmas Breakfast Sausage Casserole

Easy and delicious. I used thick french bread slices. Although I got 8 servings out of it, I would say that they were 8 small servings. Not enough for 8 big eaters!

Baklava

This was a pretty good recipe--not too sweet and pretty easy. I gave the recipe 4 stars because I didn't think the directions were as specific as they could be. For example, I did not know that I needed to thaw my phyllo dough before trying to unroll it. Also, I melted my butter which I assume you should do even though the directions don't call for that. I'm not totally inept in the kitchen, but I do appreciate very specific directions when I am trying something new!

Curried Honey Mustard Chicken

Liked this even more the 2nd time. However, I think that you could (and should) add more chicken for the amount of marinade it makes. And I forgot to marinade it before hand--just poured on the marinade and put in the over and it was still very flavorful.
