Quick, easy, and delicious!! In this day and age we all want and need recipes that don't have you spending 1/2 a day in the kitchen preparing, yet taste as though you did! Well, this is definitely a winner in my book! The changes I made were:
I used 4 pounds of potatoes. I mixed 2 pounds of the larger red potatoes with 2 pounds of the smaller petite red potatoes. (It's what I had on hand) I added the quartered potatoes to the water "before" boiling (I guess old habits die hard) and once the boiling started I reduced to medium high heat for exactly 10 minutes and they came out perfect! (Not mushy like some other reviewers stated)
The other changes I made were I used Light Sour Cream & Skim Milk and my guests seriously didn't believe me when I told them afterwards!
Next time I am going to try some other reviewers variations and add some garlic and maybe even some cheese and will let you all know how that turns out. Thanks Suzy for a wonderful, easy, doesn't break the bank recipe!
