Grilled Shrimp Scampi

This is wonderful. So easy, so delicious! I took another reviewers suggestion by changing it to half oil, half butter. The butter definitely added to the flavor. This is going on my "make for parties" list.

Mexican Bean Burgers

I had cooked quinoa so I used that (1/2 cup) instead of breadcrumbs. Used black beans instead of kidney beans because I had them made. Skipped the carrot but added garlic. Cut the salsa down to 1/4 cup. Served it on a sprouted bun. Came out so good, I had to heat up extra buns. This could become a regular. Thanks.

Louisiana Sweet Potato Pancakes

I used previous reviewers suggestions and added a little vanilla and cinnamon to the batter, doubled the recipe and make a whole stack of these for a party. They were a big, big hit. Everyone wanted the recipe. One gentle replied - oh, it's probably one of those secret family recipes!

Stir-Fried Chicken With Pineapple and Peppers

This is a lovely dish. It was easy to prepare, made a nice presentation and was very tasty. I would certainly make it for guests. Next time I am going to double the sauce and add cashews.

Sausage Mushroom Quiche

This was good. I followed the directions completely. Next time I make it I will cut down on the sausage and add more eggs. It was more like a sausage pie than a quiche. I used a deep dish crust which was good because it was filled to the top.

Oven Roasted Potatoes

I love using a lot of spices so this was for me. I used baby potatoes and a little extra garlic. Nice flavor, good presentation, easy prep. This will get added to my "dinner party recipes" file.

Mouse's Macaroni and Cheese

This is without a doubt the best macaroni and cheese I've ever had. I will look not further. The only think I changed was I increased the macaroni to 2 cups. It came out perfect. Thanks Mouse!

Penne a la Vodka II

This was a great recipe. I used diced tomatoes and tossed prosciutto in at the end with the penne. I did not drain the tomatoes. To get this to reduce properly make sure you use a large skillet and let it bubble a bit during the first two simmers. Everyone enjoyed this and was told I was "a wonderful cook". Thanks!

Osso Buco

It's an easy recipe as far as Osso Buco goes but you get what you put into it. It was so-so. There are defintely better recipes around.

Mediterranean Black Olive Bread

I have made this for several parties. Each time I do a little something different. My favorite variation of this recipe is substituting whole wheat for 1/2 of the white flour and adding rosemary, basil, oregano, and garlic to the dough. I doubled the olives too! Great recipe.

Rich and Creamy Tomato Basil Soup

I also used canned tomatoes. I pureed 1/2 of them with the basil and then simmered them together. After simmering I used a hand mixer to bring the rest to the consistancy I wanted. I also used about 1/2 the butter and milk instead of cream. My husband thought this was the best tomato soup I had ever made.

Mexican Bean Salad

I cut some of the ingredience down - the sugar to 1 tablespoon (and still thought it was too sugary)the salt to a teaspoon and the oil to 1/3 cup (which I will reduce to 1/4 next time - save the calories - it doesn't need all that oil). I will also cut down on the vinegar next time. Then I added diced tomatoes and avocado. My friends enjoyed the results.

Hummus I

This is a wonderful recipe. I made it for a party and it went over very well. I did have to add a little water to thin it a bit. If I had read the comments about not using the blender, I would have saved myself some trouble. Use a mixer if you don't have a food processor.
