Bruschetta Chicken Bake
This is the first time I have made this casserole and I think with a little tweaking I could make it a 5 star meal. I will make the following changes next time; 1. Mix the Italian spices into the stuffing rather than sprinkle them on top. They just sat of on top of the stuffing and didn't blend well. 2. Reduce a little garlic; it was quite overwhelming. One change I did make this time was to add a large handful of chopped spinach just to give it an extra punch of something healthy.

Best Peanut Butter Cookies Ever
I've been making these cookies for years. The recipe is on the side of the Kraft Peanut Butter jar and has been for years. I don't change a thing in the recipe and if you like a crispier cookie you just bake it for a little longer and if you like a chewier cookie you bake it a little less. Couldn't be easier. You can add chocolate chips or raisins if you like.

Dad's Leftover Turkey Pot Pie
I would make a couple of changes next time. I would like a little more of the gravy for the mix so I would up that slightly. I did use puff pastry on the top which worked out very nicely and I used the vegetable water for the chicken stock. I was able to drastically reduce the amount of butter (by about 75%) I used by simply adding the flour to the cooled broth and milk rather than to the onion and butter mix they suggest.
