Roasted Beets with Feta

This recipe is delicious as is, but I've made some modifications that IMO make it even better. I saute the shallot in a little olive oil. Once it's softened, almost carmelized I add rinsed, ripped pieces of the beet greens, then add 2-3 tablespoons of the dressing. Once the greens are wilted I add the feta, give it a swirl, then dish it out, placing the sliced beets on top and drizzle some of the remaining dressing overtop. I could eat this every day.

Absolutely Fabulous Portobello Mushroom Tortellini

Alfredo Sauce

Delicious! I added a second clove of garlic, used 1/2 and 1/2 instead of heavy cream and added a dash of white pepper. So good! It was a little thin (probably because I used 1/2 and 1/2) so next time I might add a little flour.

Mustard Greens 'n Beans

So good. I doubled the garlic and did a full teaspoon of mustard and a full teaspoon of red pepper flakes (we like a little heat). Forgot to add salt or pepper, still loved it.

Beet Soup

Sooo good. The only change I made was to use veggie stock instead of beef to make it vegetarian, and I added more stock as I let the beets cook for an hour. I used a dash of 1/2 and 1/2 instead of heavy cream to make it even healthier.

Baked Coconut Shrimp with Spicy Dipping Sauce

Delicious!!!!!!! I had to use more panko and coconut to coat mine, but I imagine that has to do with the size of the shrimp - I was using 31-40 because that's what I had.

Shrimp Lemon Pepper Linguini

Very, very good. I used 1tbs dried parsley, as I didn't have any fresh, and added 2 tbs capers as it seemed like a good idea. Loved it, and am now suffering from a too full belly.

Baked Bluefish

very good, though I soaked the bluefish in milk for about a 1/2 hour first, and added lemon pepper to the seasoning. Also, if I had let it cook an additional 60 minutes it would have been beyond overcooked. Once I lowered the temp to 400 I cooked it for about 30 minutes, and that was slighly dry. Next time I think I'll only cook for about 20-25. But there will be a next time!

Spinach and Tortellini Salad

Fabulous. I made the creamy italian dressing I from this site to use, fresh baby spinach and kalamata olives. I would have eaten the whole thing by myself if I hadn't made it to share!

Sweet and Tangy Sauteed Collard Greens

Made this with mustard greens instead of collards, since that's what I had. It was fabulous. Make sure you have rice with this to soak up the sauce!
