Glazed Apple Cookies

These weren't my favorite ever, but I made them for a bake sale and I thought I was going to get mobbed for them people loved them so much. As a side note, I ran out of shortening and subbed butter - I won't do that again. Still tasted fine, but the butter made them go flat as crepes and I ended up with one big sheet of cookie that fell apart.

Spinach and Tortellini Salad

Fabulous. I made the creamy italian dressing I from this site to use, fresh baby spinach and kalamata olives. I would have eaten the whole thing by myself if I hadn't made it to share!

Moroccan-Style Stuffed Acorn Squash

It was ok. If I make it again, I will cut the stuffing in half and use some different spices. As it was, I found the cumin to be overpowering and couldn't taste the other things in the stuffing. Loved the taste of the baked acorn squash with the sugar butter, but thought it slightly odd with the stuffing as is, but think with some other spices it might work for my taste buds.

Red Chard and Caramelized Onions

it was ok. needed more than 1 bunch of chard to balance out the olives and capers - or perhaps my stores bunches are smaller than others. As it was, the olives and capers (both things I love) were completely overpowering.

Pan-Poached Alaskan Salmon Piccata

As written I would give this recipe somewhere between 3.5 and 4 stars. With a few adjustments it becomes a 5. The first time I made it as is, the second time I sauted some garlic in butter before added stock and lemon juice, then after removing the salmon and reducing the sauce I added white wine and artichokes as well as the capers and parsley and let that simmer for a couple of minutes. Delicious!

Creamy Carrot Soup

very good, but doesn't not make as much as it says it does... I halved the recipe and only had enough for 3 people (thankfully, there were only 3 of us). I used 2% instead of cream, I'm sure cream would make it even better but I was trying to keep it on the healthier side.

Good, but it took longer to cook than stated. Or maybe I should have sliced my potatoes and eggplant thinner - I did about 1/4 - 1/2 inch.

Sweet and Tangy Sauteed Collard Greens

Made this with mustard greens instead of collards, since that's what I had. It was fabulous. Make sure you have rice with this to soak up the sauce!

Cream Cheese Frosting II

Delicious, true cream cheese frosting. I only made a half batch, as I only need to frost a 9x13, and after tasting it I doubled the vanilla for personal taste.

Swan's Summer Soup

Not bad. I used premade juice and then after making it as written I decided I wanted a little more going on, added another 1/2 cup of corn, a diced cucumber and a couple tablespoons of diced onion. Also added a little fresh basil. Pretty tasty on a hot summer say.

Based on other reviews I only marianted for 20 minutes and cut back on the mustard. I think next time I will marinade longer and/or leave the full mustard in. Still very tasty though.

Lemon Horseradish New Potatoes

This was so incredibly good. I didn't have the full hour, so I parboiled first and then baked them for about a 1/2 hour. Everyone at the table raved and there wasn't a scrap left.
