Fiesta Pita

Very tasty. I used tortillas, since I didn't have any pita bread, and used mexican fresco cheese instead of feta. The only thing I could see making this better would be sauteed onions and peppers.

Mustard Greens 'n Beans

So good. I doubled the garlic and did a full teaspoon of mustard and a full teaspoon of red pepper flakes (we like a little heat). Forgot to add salt or pepper, still loved it.

Baked Haddock with Spinach and Tomatoes

Worried about some of the reviews of this being bland, I made a few changes. I marinated the haddock in a garlic and herb marinade, then added a minced clove, a splash of white wine and a splash of lemon juice to the onion and spinach saute, and added a clove of garlic, a splash of white wine, a splash of lemon juice, herbs de provence and some red pepper flakes to the sauce. We were very pleased with the outcome.

Orange Beef-Style Tofu Stir-Fry

Very good. I made more sauce (about 1/2 again as much) and added snow peas, broccoli, red bell pepper, onion, mushroom and garlic to the carrots. Next time I think I'll deep fry the tofu due to personal preference.

Asian Tuna Patties

As is, these are too dry. Based on other reviews I doubled the egg and sauce part of the recipe, which worked well for both dryness and to help them hold together. Very easy to make, and very cheap. Slightly bland though, even with the doubled sauce. Next time I think I'll add ginger and maybe coat the outside with sesame seeds.

Thai Ginger Soup

Very tasty, though we modified it some. Used veggie broth instead of water, salad shrimp instead of chicken, the entire bunch of green onions (white & light green parts only), more cilantro, and we added snow peas.

Spicy Eggplant

Tasty. We doubled the sauce & garlic, added extra chili garlic sauce, thai chili peppers, red pepper flakes (we like things spicy), diced ginger and mushrooms. Used 1/2 fish sauce and 1/2 worchester as we didn't have oyster sauce.

Sicilian Spaghetti

As written, I would say this is only a 3 star, but with modifications could be a 5 star. The "sauce" to pasta ratio is off. We doubled the sauce while keeping the original bread crumb amount (which brought it to a 4 star), next time I think I would triple the sauce. Yes, I know this is supposed to be a dry pasta, but as written none of the wonderful flavors come through.

Beet Soup

Sooo good. The only change I made was to use veggie stock instead of beef to make it vegetarian, and I added more stock as I let the beets cook for an hour. I used a dash of 1/2 and 1/2 instead of heavy cream to make it even healthier.

Simple and Delicious Beet Greens

This was delicious - we were scraping our plates. I added more red pepper and added the juice of 1 (small) lemon as the greens were sauteing. Added a little crumbled feta to the top. So good, I'm going to have to go out and get more greens. I think this would be equally delicious with any kind of green - chard, kale, etc.

Luscious Lima Bean Soup

I wouldn't call this quick, but it is pretty easy and very satisfying - especially on a cold day. We loved it. I used 4 cups of veggie stock and 1 bouillon cube to cut back on sodium, but then had to add a dash of salt. I also added a bay leaf, a pinch of thyme and a large dash of white pepper. We will make this again and again. Though we are vegetarian I could tell this soup would be off the charts if a ham bone was added to it.

Clams Creole

Very tasty, though I had to use canned clams. I can only imagine how divine this would be with fresh. I knocked one star off because I needed to add a couple of dashes of creole seasoning - the veggies by themselves were a little bland for my taste.

Baked Coconut Shrimp with Spicy Dipping Sauce

Delicious!!!!!!! I had to use more panko and coconut to coat mine, but I imagine that has to do with the size of the shrimp - I was using 31-40 because that's what I had.
