Roasted Beets with Feta

This recipe is delicious as is, but I've made some modifications that IMO make it even better. I saute the shallot in a little olive oil. Once it's softened, almost carmelized I add rinsed, ripped pieces of the beet greens, then add 2-3 tablespoons of the dressing. Once the greens are wilted I add the feta, give it a swirl, then dish it out, placing the sliced beets on top and drizzle some of the remaining dressing overtop. I could eat this every day.

Greek Couscous

This is delicious. Looking at the ingredients I knew we would like it, but I had no idea just how well it would come together. I used a full can of chickpeas and added more feta. Amazingly tasty!

Fish in Foil

Pretty good - clean up is wonderful! I used a couple cloves of fresh garlic. Also added thin sliced onion. Took a lot longer than 20 minutes, but I was using steelhead trout which is much larger than rainbow.

Cream Of Garlic Soup

To emphasize what others have said - you have to love garlic to love this. How I differed from the recipe - I added 2 shallots that I needed to use up, and a little over a cup of potato (didn't see the point in not using the whole thing) and I used 1/2 and 1/2 because that's what I had. Also ended up adding about a teaspoon of sugar as the garlic was a little bitter even though I didn't burn it - I think a few of the cloves were past their prime. Added about 1/4 cup chopped fresh parsley before I blended everything, as well as 2 tablespoons of flour. Next time I think I'll add twice as much potato. I have a feeling this will be even better tomorrow. A word of caution - this takes longer to make than the time stated, especially if you're peeling your own garlic. When all was said and done it took me about 2 hours, maybe a little more, but it was worth it.

Fried Rice Restaurant Style

Lightly brown rice in a dry pot for a few minutes before adding liquid, and add onion to the peas and carrots, then it's like what you get in the restaurants.

Clam Sauce with Linguine

Good. I cut the servings to 2, used 1/2 butter 1/2 olive oil, kept original amount of garlic and added a 1/2 cup of white wine while cooking the mushrooms and garlic. I can only imagine how fabulous this would be if I had fresh clams to steam instead of canned clams.

Hungarian Mushroom Soup

We really liked this. Followed recipe as written, though next time (and there will be a next time) I might throw in some white wine or sherry - I think that would take it from very very good to sublime. I used a mix of portabella, crimeanni (sp?) and shitake.

Grandma's Salad Dressing

Tasty. I put everything but the oil in the food processor, added a clove of garlic, halved the sugar, added 2 tsp of molasses and then pureed until smooth, then added the oil in a steady stream.

Shrimp Lemon Pepper Linguini

Very, very good. I used 1tbs dried parsley, as I didn't have any fresh, and added 2 tbs capers as it seemed like a good idea. Loved it, and am now suffering from a too full belly.

Baked Dijon Salmon

This is a good recipe, however I don't think I'd recommend it for a really good cut of wild salmon as it's flavor masks the salmon flavor somewhat. Also, the butter mix makes more than you need if you are indeed just brushing it lightly on, you could safely halve it.

Chicken Tikka Masala

Made this with tofu, worked even better than I thought it would. Reduced salt to 1/2 teaspoon for marinade, 1/2 teaspoon for sauce, otherwise it would have been inedible. With that change, quite tasty.
