Spaghetti Squash with Pine Nuts, Sage, and Romano

I was underwhelmed by this dish. I love spaghetti squash and thought this would be great, but it was just kind of blah. Would have been fine as a side dish or if we'd had something on top of it, but it was our main dish. Won't make this again as is.

Creamy Italian Dressing I

I halved the recipe, since there's just 2 of us and wanted to be able to use it up in a couple of days. Used a small clove of garlic instead of powder and added about a tablespoon of grated Parmesan cheese. Used my immersion blender to mix it up. We really liked it!

Shrimp with Tomatoes and Feta Cheese

really enjoyed this. next time I think I'll add kalamata olives, but other than that I think it's fantastic as is. I also think it would make a good cold salad over cous cous or pasta in the summer.

Healing Cabbage Soup

I'm not sure if it's fair for me to rate this, as I did make some changes. I added sliced carrots while sauteing the onions, doubled the garlic, used homemade stock and omitted the bouillon, and added very healthy dashes of cayenne pepper, pepper flakes and paprika as well as added more italian seasoning (the flavor wasn't very strong on the tomatoes, which I didn't drain). It was delicious.

Michael's Foccacia Bread

This is a wonderful recipe. Be warned though, it is a very sticky dough, and if using all purpose flour it's going to be closer to 7 cups than 5, but I've also made it with bread flour (which I prefer) which uses 5. I usually chop up some garlic and kalamata olives to add to the onion, reduce the salt to 1 teaspoon in and 1 teaspoon on top. We love it, and it smells so wonderful while baking.

Sweet and Sour Greens

Excellent flavor! I'm diabetic, so I subbed Splenda (sugar would have been better) and can't eat pork so I subbed Bacco's, but it still turned out delicious.

Turkey Pot Pie I

I should start off by stating that I made some changes. I added more seasonings (thyme, sage, paprika, etc), 2 cloves of minced garlic, subbed broth for water and bouillon, used 1/2 and 1/2 instead of milk (had some I needed to use up) and increased that amount to 1 cup. Made a home made crust. End result was extremely tasty.

Cauliflower-Cheese Soup

Very nice, comforting soup. I used veggie broth instead of water and used the whole can to give my veggies enough room to simmer. Added more cauliflower and 2 cloves of garlic. Used my immersion blender before adding the cheese. Used extra sharp cheddar, and finished with a couple of dashed of cayenne and paprika. We really enjoyed this, will make again.

Black Bean and Salsa Soup

Very tasty and very easy. I left some beans whole and added in some corn for sweetness. I almost always have these ingredients on hand, so this will become a go to crunch time dish.

Blackened Shrimp Stroganoff

Made this recipe as written other than subbing white wine for the 2/3 cup broth and adding cloves of garlic in with the saute. Really enjoyed it, has a wonderful rich flavor.

Greek Shrimp Dish From Santorini

I loved this. My husband seemed slightly less enthused - he would have preferred no lemon at the end. The only thing I changed was to not bake it as long - that would have been some really over cooked shrimp.

Lana's Sweet and Sour Meatballs

Delicious sauce. I had to change some things about the meat balls themselves, not because there was anything wrong with the recipe, but because I was using veggie crumbles instead of ground beef. (Doubled the egg and the spices, added garlic) Still turned out wonderful! Based on other reviewers suggestions I doubled the sauce. Served over rice. We very much enjoyed this and will make it again.

Garlic, Spinach, and Chickpea Soup

Made this recipe as written other than subbing corn starch for corn meal (I think that was a mistype) and using 1/2 and 1/2 instead of heavy cream, and adding a small amount of smoked paprika. Very comforting. Look forward to seeing what the leftovers taste like.

Sauce Rosee

Loved this sauce. I did make a few changes, but that was due to personal preference (added more garlic and red pepper flakes and cut sugar in half) and what I had on hand (fat free 1/2 and 1/2 instead of cream). Also, I added the wine with the tomato sauce as others had suggested to give the alchohol time to burn off. I sauteed some shrimp and spinach to add to the tortellini, and it was delicous.

Kung Pao Chicken

Probably not fair to rate this recipe, as I did change it some. However, I stayed faithful to the marinade minus the corn starch and I added a dash of chili oil - but I used shrimp instead of chicken. Same thing with the sauce, I left out the starch and added a little chili oil, and since I didn't have chili paste I subbed thai chili sauce. I left out the starch because of the complaints that the sauce was too thick. I also doubled the sauce. Added more veggies, hot peppers, and red pepper flakes (we like things REALLY hot around here). Loved it and will make it again.

Bean Soup With Kale

Very very good, especially given how healthy it is. I think I would tweak it some next time though - perhaps a little more tomato, a little more beans and maybe a little less garlic (just by a bulb or 2. I love garlic but found the taste in this soup slightly overpowering.)

so tasty and comforting on a cold dreary day. Had to more than double the liquid by the time all was said and done, but I was making a smaller quantity. Used veggie broth and bouillon instead of plain water to add more flavor and doubled the garlic.

Roasted Winter Squash Seeds

I did this with butternut squash seeds. Sprinkled a little cayenne on them. Love it! But it took a lot longer than 15 minutes to cook to where they were crunchy instead of chewy - more like 35 minutes. Addictive!
