Easy Mint Chocolate Chip Ice Cream

Easy, Eggless Strawberry Ice Cream

This was amazingly delicious. A friend had just given me an ice cream maker and I wanted to try it out, plus we had ripe strawberries in our garden that needed to be used. I had to halve the recipe, as the full would not have fit in my maker. I used half and half instead of heavy cream since that's what I had. Probably used a little more strawberries than called for, I chopped them up in my mini chopper. I was so happy when I ate this that I didn't know whether to dance a jig, cry, or both! :-)

Fish Fillets Italiano

We absolutely loved this. I made a couple of changes, added an extra clove of garlic, crimini mushrooms, some italian seasoning, added the wine before the tomatoes and let that simmer for a few minutes, and used haddock. Added more wine before I put the fish in, as most of the liquid had cooked off by then. Also, used kalamata olives, which is what I assumed they meant in the first place, but I can't stand "regular" black olives as they have almost no flavor. LOVED IT.

Best Black Beans

I liked this, but think it would have been better if I had sauteed the onion and garlic first. I rinsed the black beans (the "juice" that they're in is very high in sodium plus harder on the digestion) and then covered them in low sodium veggie broth.

Garbanzo Tomato Pasta Soup

This was a comforting, simple recipe. To make clean up even easier I only used 1 pot - first I sauteed the onions and garlic, then added the broth, tomatoes, beans, etc, brought it to a boil and then dumped in the pasta and cooked for 8 additional minutes. I think this would be amazing with fresh herbs instead of dried.

Quinoa and Black Bean Chili

We really liked this. I had to add quite a bit more liquid (I used veggie stock) as it was way too thick to simmer, but I really enjoyed the flavor. I did use more than 1T of the chipotle in adobe sauce, more like 1/2 of the small can, but we like spicy.

As written this has way too much butter and a little too much sugar in it for my taste. I cut the butter in half, next time I think I'll cut the sugar in half too. However, with those changes we loved it.

These turned out perfect. I used butter instead of shortening and brushed the biscuits with melted butter when I put them in the oven and then again a couple of minutes before they were done. Had to cook longer than 13-15, more like 20 but my oven always takes longer.

Pasta e Fagioli I

After making a few adjustments we loved this. 1) The stewed tomatoes I had were very large, so I took my immersion blender to it, and then diced up a few other tomatoes. 2) Added an extra clove of garlic. Next time I think I'll add 2. 3) Drained and rinsed the beans. I find the slimy juice they're in disgusting, not to mention very high in sodium and more likely to cause gas. 4) After tasting it and finding it a little bland I added red pepper flakes, oregano, more basil (this would be so much better with fresh basil) and some Mrs Dash italian seasoning blend. 5) Sprinkled grated Parmesan cheese on top before serving. Husband said the smells from the kitchen were driving him crazy, and he went back for seconds.

Whole Egg Mayonnaise

I'll never go back to store bought mayo. Not that this tastes all that different, but because 1) Since we raise chickens for eggs I can make this for almost nothing. 2) No chemicals. 3) I can add different things to make it even tastier for the meal at hand. What I do differently from the recipe - I put my eggs, salt, mustard, 1T vinegar, 1T lemon juice and whatever else I'm going to add (usually 1 clove of garlic and a dash of white pepper) into a wide mouth mason jar and blend with my immersion blender, then slowly add in the oil with the immersion blender running until I get to the consistency that I want (usually takes about 1-2 minutes).

Blueberry Banana Bread

This was delicious! The only thing I did differently was to sub brown sugar for white, though I think it didn't fluff up as much because of that. End result was still good enough that a couple hours after it came out of the oven it's almost all gone!

Thai Style Shrimp

We really liked this and will make it again. The only changes I made: I added a thai chili pepper to the paste mix, and added about 2 teaspoons of red curry paste and a couple of healthy dashes of red pepper flakes to the sauce. (we like it spicy!)

Spaghetti Squash with Pine Nuts, Sage, and Romano

I was underwhelmed by this dish. I love spaghetti squash and thought this would be great, but it was just kind of blah. Would have been fine as a side dish or if we'd had something on top of it, but it was our main dish. Won't make this again as is.
