Lentils And Spinach

Pretty good. As other reviewers suggested, I doubled the lentils and cooked in broth and added carrots and used fresh spinach. I think this would be fantastic with cashews added in, it's really a very versatile dish.

Veronica's Hot Spinach, Artichoke and Chile Dip

This was delicious. To keep it egg free (a person at the party has allergies) I used sour creme instead of mayo. I also sauteed some garlic, though I honestly don't know if that added much. Used fresh spinach and jalapenos.

Tex-Mex Turkey Soup

Very tasty. I halved the recipe and made a few changes because of that and to make it healthier. I used a few tablespoons of tomato paste instead of condensed soup, home made salsa, fresh parsley, and only 2 tablespoons of sour creme. Also added some red pepper flakes, a dash of cayenne and paprika, and a dash of hot sauce. Topped it with some crushed organic blue corn tortillas and some shredded cheddar.

Black Bean Vegetable Soup

This was very tasty. I would add a little more garlic next time, as we love garlic. I added a dash of red pepper flakes and our homemade hot sauce to give it a little bit of a kick. Served with a sprinkle of cheddar cheese on top and with a grilled cheese on the side it was the perfect meal for a cold rainy night.

Sweet and Sour Pork III

Pretty good. Found something subtly lacking in the sauce. Added 1 large clove minced garlic, and a small dash of 5 spice, which helped, but still needs something else to make it wow. We still enjoyed it though, and will make again while fooling with the sauce some until we get it perfect.

Portobello Penne Pasta Casserole

Really good. I did make some modifications though. I hate frozen spinach so I used fresh (and thus doubled the amount), added an extra clove of garlic, Italian seasoning instead of just basil, dash of red pepper flakes, and about 1/2 cup of sun dried tomatoes, and used a mix of mozzarella and Parmesan cheese.

Gazpacho

Very easy and very tasty. I sauteed the onion and garlic first, used an Anaheim pepper instead of bell, fresh basil instead of dried. It was very tasty that night, even better the next.

Vermicelli Noodle Bowl

We really enjoyed this, great on a hot summer day. Didn't have pickled carrots, subbed snow peas. Didn't have daikon, used a variety of other radishes. Sauteed the shrimp.

This was ok. If I had ordered it at a restaurant I wouldn't have been upset with it, but I also wouldn't order it again. Both my husband and I thought it was on the bland side, and we thought that the addition of a large amount of garlic would help.

I really liked this. I decreased the olive olive oil slightly and made up the difference with sesame oil, also decreased the soy some. Next time I think I'll add some onions before I blend.

Vanilla Cherry Ice Cream

So good. To fit in my ice cream maker I had to halve the recipe. I used 1 cup heavy cream, 1 cup half and half but still used 2 cups cherries, which I quartered. Got rave reviews from family members!
