Fabulous Zucchini Grinders

We loved this, though I did make a few changes. I used fresh tomatoes out of my garden. Next time I will cut the sugar in half, it was a little sweet for my taste. I added some diced onion, sliced mushrooms and sliced banana pepper to the diced summer squash. I toasted my bread, hollowed out some of the interior, and placed half the cheese on the bottom. Once I put the contents in I put it in the oven without wrapping it and let it back for about 10 minutes until the cheese melted. Bread wasn't soggy at all. We will make this often until the squash runs out!

Sean's Falafel and Cucumber Sauce

Very tasty, but next time I think I will try baking them - I had problems with them falling apart in the fry pan. I did add extra cucumber to the sauce, as well as a small clove of garlic and some lemon juice. Also used a tablespoon of fresh dill instead of a teaspoon of dried. Very nice flavor!

Sweet and Spicy Green Beans

Very good! I added more stir fry veggies and doubled the sauce to make a main dish, we very much enjoyed it. I did add a healthy shake of red pepper flakes to make it spicier, per our tastes, but the sauce would have been quite good without it.

Southern Pimento Cheese

Very good, though I only had 6 ounces of cream cheese and used more shredded cheese. However, I found that the cream cheese made the spread slightly too thick and rich when served cold. It did melt to a beautiful texture warm. When making this again I would cut the cream cheese more if I were planning on serving it cold and keep it at 6oz for hot.

Creamy Garlic and Onion Spaghetti

This was pretty good, and I would probably make it again, but did not feel it was amazing. It seems to be missing something, but I'm not sure what. First time I made it I followed the recipe, second time I added mushrooms and shrimp which were a nice addition but still felt like it could be better.

Coconut Curry Tofu

This was delicious. We had to make a few minor changes based on the season and what we had at hand. We used red curry paste instead of powder, sirachi chili sauce instead of paste and added a couple of diced thai chili peppers, and canned diced tomatoes instead of fresh since it's still winter and I can't stand greenhouse tomatoes. We loved it. Can't wait to make this in the summer when we can use fresh tomatoes, peppers, and thai basil from our garden.

Cauliflower and Tofu Masala

We really liked this. I followed the directions exactly, and we served it over rice. Word of warning, this has a decent amount of heat in it, if you're not a person who likes spicy (we LOVE spicy), cut back on the cayenne and the peppers.

Cornish Game Hens with Garlic and Rosemary

I had a small roasting chicken, and much to my dismay not nearly as much garlic as the recipe called for. Still came out really tasty. I brined the chicken first, then stuffed it with rosemary, sage, onion and lemon. I put some stock in the bottom of the pan so what little garlic I had wouldn't burn.

Jalapeno Cranberry Sauce

Ehh... maybe our jalapenos weren't that hot, because I couldn't taste any heat in the end product. I was pretty disappointed, I had such high hopes. There are other cranberry sauces that I like more.

Lentils And Spinach

Pretty good. As other reviewers suggested, I doubled the lentils and cooked in broth and added carrots and used fresh spinach. I think this would be fantastic with cashews added in, it's really a very versatile dish.

Veronica's Hot Spinach, Artichoke and Chile Dip

This was delicious. To keep it egg free (a person at the party has allergies) I used sour creme instead of mayo. I also sauteed some garlic, though I honestly don't know if that added much. Used fresh spinach and jalapenos.

Tex-Mex Turkey Soup

Very tasty. I halved the recipe and made a few changes because of that and to make it healthier. I used a few tablespoons of tomato paste instead of condensed soup, home made salsa, fresh parsley, and only 2 tablespoons of sour creme. Also added some red pepper flakes, a dash of cayenne and paprika, and a dash of hot sauce. Topped it with some crushed organic blue corn tortillas and some shredded cheddar.

Black Bean Vegetable Soup

This was very tasty. I would add a little more garlic next time, as we love garlic. I added a dash of red pepper flakes and our homemade hot sauce to give it a little bit of a kick. Served with a sprinkle of cheddar cheese on top and with a grilled cheese on the side it was the perfect meal for a cold rainy night.

Sweet and Sour Pork III

Pretty good. Found something subtly lacking in the sauce. Added 1 large clove minced garlic, and a small dash of 5 spice, which helped, but still needs something else to make it wow. We still enjoyed it though, and will make again while fooling with the sauce some until we get it perfect.
