Homemade Tomato Sauce I

I made this Sat. July28, 2012, i tweeked it a bit, used mushrooms and fresh oregano, lots of basil from my garden. It came out good, still cooking it though.

Broccoli and Cauliflower Casserole

My husband made this for Christmas day at our daughter's. It is amaZing, he tweaked it a bit. Did not put rice in the dish, added a variety of spices and durkee's, which originally he makes broccoli with durkee's, it is his mother's recipe. He also used red peppers flakes. It was delicious. Will surely make this again and again.

Vegetable Beef Soup II

This is a good hearty beef soup, I have not made this type of soup in a long time, but I wanted more vegetables and so I added fresh tomatoes, zucchini, lots of fresh basil and fresh thyme. Did not have beef bouillon so I added 2 tsps of bragg amino acids acting like soy sauce. My husband suffers from high blood pressure so I am trying really hard not to give him salt. It did not come out the way I thought it would, I like alot of salt, so this dish left me not too excited. It was me not the recipe.

Roasted Vegetable Lasagna

This was really good, I tweeked it alot and made my own sauce, lots of basil, parsley, thyme,chile peppers, cilantro, fresh tomatoes and I used tinned cans of stewed tomatoes, paste etc. Cajun seasonings and lots of onion and garlic. I only used zucchini, it was fantastic. I used cottage cheese instead of ricotta and a combination of Itailian cheeses and mozzarella. My husband loved it.

Favorite Old Fashioned Gingerbread

I made this dec.10,2010. I did add double cinnamon, cloves and ginger. I did add 1/2c. applesauce and 2 ozs .cream cheese and doubled the recipe, added only 1 cup hot water, since I added applesauce and cream cheese. It came out so excellent, very moist,and I made cream cheese frosting.

Cathy's Banana Bread

I made this into a banana cake, I did my pecan coffee cake recipe, instead of margarine I used 1 cup butter, I cup mashed bananas. I also used 1cup walnuts, 1 tbsp. cinnamon, 2tbsp brown sugar and baked in the oven until a little crisp. Then made batter and put layers of creamed mixture and nut mixture.

Chocolate Chip Muffins

I made this on July 29,2010 for Josiah who loves chocolate, I added 1/4c. almonds and three bananas. They are baking now, will see how they come out. Isaiah loved the batter, that is a good sign.

Chocolate Chip Apricot Cookies

Made these cookies sat Aug14, to celebrate my sister's birthday, they came out very good, I love them chewy and the taste of apricot mixed with the chocolate, splendid. This recipe is a keeper. I made no changes other than cutting back on the sugar. Cutting it back by a few tablespoons each sugar.

Curry-Style Chicken and Spinach

Now I know I put curry powder in it for colour and taste, but you cannot add salt to curry that is what I discovered, so won't do that again, anyway it was a great learning experience, since I am from the Caribbean, we make alot of curries and we never use spinach, so this was very exciting, for spinach is so good for you.

Cucumber Sandwiches III

I loved these cucumber sandwiches but made a few changes, I added the dill weed to the cream cheese and used regular bread and once I put the cream cheese filling added the cucumber then I placed a sprig of basil on top then sandwiched them. It is a good recipe, I really wanted true english cucumber sandwiches.

Nutty Apple Crisp

Turkey Pot Pie

I tripled the recipe since i had 6 pie shells, it came out really good, put some red pepper flakes to spice it up a bit. Should have read the reviews about the baking of the pie shell for 10 mins, oh well still came out really good, will make again, right after thanksgiving 2011.

Sylvia's Mango Chutney

This chutney has a kick to it, it makes about 6 bottles. I, myself don't like chutney, so I will wait to hear what my husband has to say. It goes well with curry and lamb. Has a bittersweet taste to it. I made it on the 13thAugust, 2010. This chutney is full of good ingredients. Take a look for yourself.

Favorite Banana Blueberry Quick Bread

This banana blueberry bread was really good, it came out sp light and tasty. I doubled the recipe, and it made 2 large loaves. This will do so good for one for the mailman and one for my grandson. I give it 5 stars.
