Creamy Au Gratin Potatoes

My families new favorite comfort food. I made this with just minor alterations after reading some positive reviews. I used 1 cup milk and 1 cup half-and-half. For the cheese I used Sargento's 4 Cheese Blend (which has both sharp and mild cheddar in it). I diced my onion (but did not need to pre-cook). And I used just a bit of cayenne. It came out beautiful like in the picture and was delicious. For those that said it was runny, I think that it is important to make certain to cook and stir until the mixture has thickened before adding any cheese. I did used pre-shredded cheese and as long as you cook it long enough to entirely melt it, it should not come out grainy. This was so good, we are having this again today with our Thanksgiving dinner.
