French Breakfast Muffins
I made pretty much as the recipe is written with one exception. Instead of waiting for the muffins to come out of the oven to top them, I just sprinkled the cinnamon sugar right on the uncooked muffin tops and then baked. They came out with a nice crunchy cinnamon crust, and I cut out quite a bit of butter and a lot of mess and fuss. Really nice, sweet, delicately spiced muffin. Note: those who are finding these too dense are probably over mixing them. The liquid ingredients should be stirred in with a spoon until the flour is all moistened, no longer. Never use an electric mixer.

Bow Ties with Sausage, Tomatoes and Cream
Surprisingly bland. I made almost exactly as written. I don't buy flavored tomatoes, so I used plain diced tomatoes and added a teaspoon of Italian mix seasonings. It wasn't bad, it just wasn't good either. I just had it leftover and the flavors did not seem to improve any. Parmesan cheese did help a bit. It was like all the onion, garlic, pepper flakes, and seasonings just gave up. Won't be making this again because I can't figure out what was wrong.

Skillet Peach Dumplings
This is absolutely delicious and so easy. I did the peaches exactly according to the recipe (except I used butter instead of margarine). I changed the dumpling recipe slightly since I had never seen a fluffy dumpling recipe with cut in shortening, and I was afraid the texture would be more like biscuits than dumplings. I used my mother's recipe which is similar except it calls for breaking two eggs into a measuring cup and filling with milk to make one cup instead of cutting in butter. I will try again with apples and maybe blueberries. Wonderful flavor.
