This recipe is a decent tasting recipe, but it is not at all good for you! 4 cups of confectioner's sugar is WAY TOO MUCH! Not necessary. If you want a sweet satisfying icing without the sugar spike, diabetes, tooth decay etc.... try using the same amount of cream cheese, butter and vanilla and add only one cup of powdered (I used a coffee grinder to powder mine) xilitol or birch sugar. Available at health food stores like Vitamin Shoppe. I added one cup xilitol and one cup Organic cane sugar to the cake. You can use rapadura instead as well.
