Zucchini Pancakes

Reviewed: Jul. 15, 2010
turned out good, a little tasteless in my opinion, my girlfriend loved them, the second batch I added another tablespoon of mayonnaise a pinch more onion, 1/2 cup more of Parmesan cheese, and a pinch more oregano, um really tasty after that, and the last batch i added some La Costena Green Pickled Whole Jalapeno Peppers, I just cut up 1 in little pieces.

Best Ever Jalapeno Poppers

Reviewed: Sep. 19, 2010
all I can say is fantastic recipe, followed exactly. I also made deep fried balls with just the Jalapeno filling for those who dont like the peppers. I used a deep fryer, and agree with others that taking out the seeds takes out the heat, will leave some in next time.

Delicious Ham and Potato Soup

Reviewed: Oct. 6, 2010
O-My-Goodness the best potato soup in my humble opinion. First time I made it as written. (fantastic) Today I changed it a little, I added sliced carrots, and I cooked up separately some store bought egg noodles I had on hand, I then added them to the potato soup when it was just about done. I also substituted chicken broth for the water and bouillon cubes as other I read had done also. my wife and mom loved it...(update) I added some frozen brocoli after everything was combined and it was wonderful. one bite tasted like brocoli soup, the next bite tasted like potato soup, best of both worlds, left out the noodles and ham,

Chocolate Mint Candies Cookies

Reviewed: Dec. 14, 2010
best cookie ever if you like or love mint. I followed the recipe except using chocolate morsal chips instead of semi sweet chips, for the mint I used andies mint baking chips, I just used a 1/2 teaspoon to put the mint chips on the cookies when they came out of the oven, waiting for a minute before doing so. I spreaded the mint chips around with the back of a spoon and it worked great. One thing the dough got hard after 2 hrs in the fridge, id say it was the chocolate morsals, maybe leave in the fridge an hr or less. I baked them for 10 minutes and they were perfect also mine were not lumpy as others said theres was. another tip you can use you thumb or the back of a spoon and make an indent in the cookie when the first come out of the oven and fill the indent with the mint baking chips, only if you love mint lol.

Big Soft Ginger Cookies

Reviewed: Dec. 24, 2010
What a treat. I really dont like the hard ginger snaps. these are crazy good. I set the servings to 36 (cookies) and it called for an egg and 1/2. so i put in 2 (extra large eggs) and the came out cake like on the inside, fantastic. I also stuck the dough in the freezer for 30 minutes and they where real easy to roll, i put the dough back in the frezer while the batches where baking. I actually got 50 cookies...yeah lol......dont forget to smash them down to about 1/2 " thick before baking. I might try to icing on them since there cake like cookies.
