Recipes for Grain Free diets

I've done some searching through the recipes on for grain-free meal ideas. Basically any meat dish that isn't breaded is a good option. The vegetarian recipes are great, and leaving out the grains is usually easy. Many Indian dishes are served with rice or chapati bread, but by themselves are still wonderful. I've found that sauteed cabbage, kale, chard, spinach, or any of the rather firm leafy greeens makes a great side dish and takes over the open space left by the grains. Most of the low-carb searches on AllRecipes will unveil good grain-free meal ideas.

There are some good substitutes for potato chips. Terra makes vegetable chips that are heavenly and come in many flavors. I don't eat them very often, but sometimes you just need some chips for guacamole or taco filling when you can't eat the taco shell. They have recently increased the flavors and types of chips they make. Obviously, the demand for their products is growing.

Another good addition to salads (and a substitute for sesame and wheat berries) is sauteed walnuts. I usually use chile powder, olive oil, garlic, onion flakes, a bit of rosemary or cumin and saute the chopped nuts until they just start to brown. They'll keep in a closed container for a week or two, or longer in the refrigerator. They make a great topping for scrambled eggs, tofu, thick stews, and are healthier for you than cheese.

I have a 2 century old recipe for butterhorn rolls that is simply to die for. My mother is an excellent cook, who is self taught. I remember when she went through every single recipe in some cookbook when I was in high school. We never had the same thing twice in over a year. Some were wonderful, many were awful. But she learned, and I've not had a mediocre meal at her house in 30 years.
My cooking triumphs
Bread in a bread machine made entirely from non-grain flours. It was a bit too moist but it was tasty and made some great sandwiches.
