Blackened Fish

Wonderful fish recipe! Make sure your pan is screaming hot before putting the fish in so it doesn't stick. I mix up large batches of the seasoning to have on hand at all times. I serve the fish on top of greens with a bit of lime juice and olive oil. Super healthy and tasty!

Vietnamese Fresh Spring Rolls

These were amazing! I love the homemade sauce. I put much more lime juice in it, and made the garlic chili sauce from scratch, as well as the hoisin sauce, since I will be moving soon and didn't want to buy huge jars of either. I added more mint, basil and cilantro than the recipe called for as well, and it came out wonderful!

Good Old Fashioned Pancakes

Wow, this recipe is amazing!! I will have to ditch my old buttermilk pancake recipe in favor of this one. I added some more milk to make it a little more runny, but I actually prefer the pancakes made with the original recipe instead. I also added 3 ripe bananas to the batter. YUM!! They hit the spot.

Green Avocado Salsa

I used this recipe as a base, but I made significant changes. I roasted the tomatillos after cutting them in half and putting them face down on a baking pan. I cooked them until the tops were brown and they were soft. I combined them with a ripe avocado, half a bunch of cilantro, salt, lime, and 1/4 of a white onion in the blender. I omitted garlic because I find garlic to overpower the other flavors, even though I usually love garlic. The resulting salsa is amazing!!

Chicken Pot Pie IX

Yum! I was so pleased with how this pot-pie came out. I followed others' suggestions and made a few modifications: I used a bag of frozen veggies that included corn, lima beans, and green beans in addition to peas and carrots. I used chicken broth instead of water in the veggie mixture. I cooked the base pie crust for 7 minutes after brushing with egg whites. I added salt, poultry seasoning and garlic powder. I eyeballed all the other ingredient amounts (and increased the liquids to avoid dryness) and ended up with enough for two pot-pies, a special treat for my sister-in-law!

Firecracker Grilled Alaska Salmon

This is a knock-out recipe for salmon! I'll be making it again and again. The only difference I made was I substituted fresh ginger for ground, to make sure the ginger flavor really came through. I also added a lot more garlic and a little more vinegar. Delish!

Dutch Apple Pie with Oatmeal Streusel

I followed this recipe almost exactly, and like other people, found that it came out too watery. Also, I thought the streusel top had too much butter in it. If I make this again, I'll add more flour to the apples and cut the butter down by half. The flavor of the pie is excellent, I must say.

Pasta with Tomatoes and White Beans

This was really delicious. I added some frozen turkey meatballs to make my meat-eating boyfriend happy, and I added more italian seasonings. I served with bow-tie pasta and topped with parmesan, a real winner!

Avocado Shrimp Ceviche-Estillo Sarita

This is the first time I've tried making ceviche at home and it came out really delicious. Like some other people, I added some chopped jalapeno to give it a little kick, and I served it on tostada shells instead of with crackers. I was surprised I liked the sauce so much - I was very skeptical about the ketchup. My boyfriend loved it too. I will definitely be making this again!

Asian Orange Chicken

This is a pretty good recipe but I had some problems when I followed it exactly. I agree with other posters that it's not a good idea to put the cooked chicken in the sauce because the breading becomes all goopy and falls right off. Also, I had a hard time getting the sauce to be the right consistency; it was too watery, and when I added the amount of cornstarch it called for it became chalky and almost the color of gravy - not orange at all. I was also disappointed with the flavor - while it was good, it's just not what you get at a restaurant. I even prefer the Orange chicken out of the box from the store over this recipe. I had high expectations but this one wasn't the winner I was hoping for.

Mom's Buttermilk Biscuits

These can't beat my aunt's biscuits, which are pretty famous in my family, but they sure come close! I sifted the dry ingredients and used butter-flavored Crisco which gave the biscuits a nice buttery flavor. This recipe is simple and produces great results, I'll definitely be using it again!

Vegetable and Feta Latkes

These latkes are really delicious. I didn't measure anything out, and in the end the mix came out a little wetter than I wanted so I added more flour (since I had used all my matzo meal). I also added more salt. The result is delicious!

Boiled Peanuts

YUM! These peanuts take me back to when I was a teenager and used to play softball in rural Georgia, and there would always be someone selling boiled peanuts at the softball fields. I'd indulge in them after the games, win or lose. I only used 1lb of peanuts and eye-balled the salt. Very easy and delicious!

Butterscotch Bread Pudding

I was skeptical about this recipe but WOW! It was delicious, and a great way to use stale bread! I used a loaf of french bread that was stale and hard on the ends, and it came out beautifully! My boyfriend loves it and asked me to make it again for his birthday at the end of the month :)

Lobster Bisque I

This is a pretty good starting recipe, but as with all recipes I made substantial changes to it. I was able to find a lobster boullion sauce that I substituted for the broth it called for, which gave the bisque a rich flavor. Also, I didn't strain the soup base but rather, pureed it in batches after cooking the veggies. I doubled the amount of butter to make the flour paste, and I used a can of diced tomatoes and 3 tbs of tomato paste instead of the tomato puree. I only added about 1/2ts of tarragon because of how strong the flavor of this herb is. I followed other posters' suggestions and set 1/2 of the lobster aside and chunked it into the soup after pureeing. I'm going to buy another lobster and cut up the meat and add it to the leftovers because it still wasn't quite chunky enough for my taste. All in all though this is a very good recipe!

Easy Red Beans and Rice

This recipe came out really good, but I added a LOT more spice. I think it would have been pretty bland if I hadn't. I ended up adding about 2 or 3 tbs of Emeril's Essence, and about 4 more garlic cloves than it called for. The result is perfection! Yum yum!

Stuffed Tomato Basil Chicken

This has got to be one of my favorite chicken recipes! The basil really tasted delicious with the other flavors and paired well with the chicken. I used sun-dried tomatoes instead of fresh ones, but the flavor of the tomatoes was completely overshadowed by the basil. I couldn't really taste the provolone either. I think the keys to this dish were the marinade, basil, bacon, and parmesan on top. I made my own marinade with fresh crushed garlic, Italian seasoning, lemon juice, olive oil, white wine and salt & pepper. If I make it again I might just omit the other ingredients that I couldn't taste, and see if it makes a difference. All in all a fabulous recipe!
