Easy Vodka Sauce

This sauce was very good. I did however add 1/4 tsp. of oregano, 1 T. dried parsley (didn't have fresh on hand), 1/8 tsp. of basil (the crushed tomatoes I used already had basil in) and 1 tsp. of sugar. I will definitely make this again and next time I will try adding some diced pancetta in with the onions. Thank you for the recipe.

Zucchini with Farfalle

Made this tonight and it was fantastic, everyone loved it. My daughter said we have to have this at least twice a month or more. I started with sauteeing carrots in the olive oil with some dried basil, then added red bell pepper, zucchini & yellow summer squash and ended with some mushrooms. Made everything else the same but did have to add more heavy cream and I added fresh grated parmesan right into the cream sauce. Didn't add the salt, the cheese was enough. Will definitely make this one over and over again.

Hot Spinach and Artichoke Dip

This dip was very good. I used shredded parmesan cheese in place of the grated (didn't have grated and didn't have the time to grate fresh, so I used what I had on hand) it didn't seem to make any difference that I could tell. My husband also liked it very much and he is not a dip person. Thanks for sharing this recipe.

Chicken Tetrazzini IV

This was extremely tasty. The changes that I made were as follows. I used white pepper in place of black, I used fresh sliced shiitake mushrooms (only because I had them on hand) and I added some diced celery, I also used chicken thighs only which I sauteed in some olive oil with salt & pepper. My entire family loved this and they kept refilling their plates until there was nothing left. My son suggested next time I try adding some buttered bread crumbs on top. So we will definitely be making this again.

Quinoa Salad with Dried Fruit and Nuts

Very tasty dish. I used dried cranberries in place of the raisins as that was what I had on hand and I may have left out the nuts because I didn't have them. I will definitely make this again.

Skillet Zucchini

I made this as directed using turkey bacon and garlic & herb bread crumbs. I could not give this over 3 stars because it turned into gooey mush. I served it over toast and that helped; but I agree with Hollyholly that it would have been better without the bread crumbs. I will try this again and maybe try croutons in place of the bread crumbs or just leave them out completely. Otherwise this dish was very flavorful.

Zucchini Brownies

These brownies were exceptional. I made them exactly as written using sunflower oil as my vegetable oil and I never got the chance to make the frosting -- they were gone before I got the chance to mix it up. The mixture was dry and I was skeptical but after reading other reviews I went ahead and they came out perfect--glad I didn't add anything. On another note--my husband has stomach troubles eating chocolate and he tried one and then went back for another and NO stomach troubles with these. I'm not sure if it was the oil or the cocoa powder that made the difference but I may never make any other kind of brownies from now on. I do want the chance to try them with the frosting. Thank You so much for this wonderful recipe.

German Red Cabbage

I made this exactly as recipe called and it was delicious. Even my picky eaters loved it and went back for more. Highly recommend this dish. I put it with German sausages & spaetzels.
