Quick Chicken Piccata

To the person who asked about putting the sauce over angel hair pasta... Yes, I make double the sauce and put it on angel hair. But first I saute some garlic in olive oil and put in the pasta and toss with some Parmesan. It's great.

Fresh Southern Peach Cobbler

I followed the recipe exactly, except that I accidentally put 3 instead of 2 teaspoons of cornstarch in it (accidentally grabbed the 1.5 teaspoon). It was a runny mess. Peach soup as another reviewer described it. There was more peach juice than anything else. The peaches were floating and the dough was sinking. Even the accidental extra teaspoon of cornstarch didn't help to thicken it. The crust was still raw after 30 minutes @ 425 but the sugar topping was starting to burn.

Mary's Meatloaf

Great meatloaf recipe. I made it into mini-loaves as we like more "crust". My 8 year old said it was delicious. I doubled the recipe and froze half uncooked. I have found that cooked meatloaf becomes mushy after being frozen and thawed. I was a bit afraid of the mustard as I really don't like mustard w/ hamburger, but went with it based on comments and it was not really noticeable in the sauce.

Egg Noodles

Not even close to Mom's. I couldn't find my mom's recipe for egg noodles and didn't want to call her for the recipe and get into a 30 minute convo at the time so looked online and found this. These are dense and rubbery. I could even tell when I was rolling them out they weren't going to be very good. My mom's recipe is very light and fluffy and tastier too. I guess some people like dense noodles, but not me. Off to call mom now.

Clone of a Cinnabon

Excellent. Not exactly Cinnabon, but just as good. I can't quite pinpoint what makes it not quite Cinnabon, but no matter. I did not have the problem of the filling running out like some complained of. I'm guessing they did not roll them tight enough. Another reviewer said to turn the pan over when baked to let the filling run bake in. This was not necessary for me. I did combine the butter, brown sugar and cinnamon to spread all together as someone suggested. Not sure if that made a difference or not. That method was hard to spread evenly though, so next time I'm going to try it as the recipe says. I took the advice of another reviewer who said to double the icing, but double is about twice too much. Someone must have a major sweet tooth. I think double icing would make me sick. So I will make another batch in a few days to use up the other half of the icing. I disagree with another reviewer who said the filling was too cinnamony. It was fine. The dough was pretty easy to make and came together really nicely.

Monkey Bread I

Yummy! However, the inside pieces were doughy, so it could have used another 5 or 10 minutes, but I think that's just my oven as I frequently experience needing more time with other recipes. I daresay this rivals my mom's homemade from scratch sticky buns without all the work. I think that next time I'll bake it in a 9x13 pan as my family likes the outside pieces the best, and you get more outside pieces that way. Honestly, the bad reviews, they must of done something wrong. I don't see how this cannot turn out great.

Crescent Pastry Puff

Delicious! The directions are not clear on the slicing and braiding. I had trouble with that to start and realized after the first braid that the slits need to go just about all the way to the apples. My apples (granny smith) were pretty small, so I thought I needed to use 4, which was too much. I think 3 small apples would be the right amount. Those saying 3 is too much may have been using big apples, in which case I agree that would be too much. The apples were a little crunchy (they were chopped into very small pieces) so next time I will pre-cook them a little. It was good the next day too, not a soggy mess as another reviewer reported.

Yeast Waffles

Can anyone enlighten me on the nutrition calculations? It says 11.8g of protein per serving. According to my calculations protein is as follows: milk 2x8=16 + flour 3x3=9 + eggs 2x6=12, for a total of 37 grams of protein in the recipe, divided by 6 servings = 6.2 grams protein per serving. (Butter has minimal protein so I'm not bothering to count that). True protein content is very important for me know, because it is very difficult for me to get sufficient protein into my kids, so I need to count every gram. But I am questioning the accuracy of this website. It appears to me to be showing almost double the protein grams. I added a teaspoon of vanilla. The last two I made I added some cinnamon and it made them even better. The cinnamon and vanilla cover up the yeast taste, which is undesirable to us.

Fluffy Pancakes

These are wonderful pancakes. I had always used pancake mix because my sister makes pancakes from scratch and they weren't any better than the mix, so I always thought, why go to the trouble? But I was at my Mom's and wanted to make pancakes and she was out of the mix she usually has, so I had to make them from scratch. Tried this recipe and I will never buy pancake mix again! I didn't know what I was missing. They are addictive. I eat more of these than I otherwise would, they are so good.

Always a hit. I forgot to grease the pan and it really doesn"t need it. I think this would make a great artichoke dip too. i would leave it the same and just add artichokss.

Rich and Creamy Beef Stroganoff

Very good. I was afraid of the pepper flakes and only used 1/2 t. Still had a slight kick. I think next time I will omit them entirely. I like spicy food but not spicy stroganoff.

Easy Sausage Rolls

I have long been using essentially the same recipe that uses hot breakfast sausage which gives it a nice kick but not too much. Today I decided to try and lighten them up and used neufchatel cheese (the American version, not French, there's a big difference) and subbed half of that with cottage cheese, which also increases the protein content. To reduce the possibility of my kids whining about chunks of cottage cheese in it, I food processed the cottage cheese, though I'm not sure that is even necessary if you use small curd. I just didn't want to take a chance. I could tell no difference with these modifications. They were just as good, maybe even better. I think they are a little heavy and dense with all cream cheese and they seemed "fluffier" this way.

Tasty Buns

Great for hamburger/sandwich buns. I made them for pulled pork my husband made in the smoker. I don't think that I care for them as dinner rolls, but my husband like them on their own, as did my 9 year old who rubbed his belly and proclaimed them "delicious". Very easy to make, too. No kneeding.

Apple Crisp II

Yummy! My 8 year old proclaimed this "the best dessert ever!" and said I should make it every day (uh, no). He really like the oatmeal in the topping which was a surprise to me.
