Easy Sausage Rolls

I have long been using essentially the same recipe that uses hot breakfast sausage which gives it a nice kick but not too much. Today I decided to try and lighten them up and used neufchatel cheese (the American version, not French, there's a big difference) and subbed half of that with cottage cheese, which also increases the protein content. To reduce the possibility of my kids whining about chunks of cottage cheese in it, I food processed the cottage cheese, though I'm not sure that is even necessary if you use small curd. I just didn't want to take a chance. I could tell no difference with these modifications. They were just as good, maybe even better. I think they are a little heavy and dense with all cream cheese and they seemed "fluffier" this way.

Buttermilk Seed Bread

Excellent bread. Best wheat bread I've ever made. My 9 year old asked for seed bread like Corner Bakery's Harvest Bread and this was a good approximation.

Burgundy Pork Tenderloin

It was just okay. Per other reviews, I cut the wine in half and subbed beef broth for the other half and the wine taste was still plenty strong. I can't imagine using the full wine amount. I also browned the meat first.

Sugar Cookie Icing

Great for icing cookies. Spreads nicely. The milk may need to be adjusted to get the correct spreadability. It works better if it's a little runny.

Gingerbread Waffles

They were good, but the gingerbread taste was too mild for me. I really like the taste of the Williams Sonoma Gingerbread pancake recipe, which has 1/8t of Cloves, which probably gives it that spicy gingerbread taste I'm looking for, so I'll add that next time.

Quick Chicken Piccata

To the person who asked about putting the sauce over angel hair pasta... Yes, I make double the sauce and put it on angel hair. But first I saute some garlic in olive oil and put in the pasta and toss with some Parmesan. It's great.

Dark Chocolate Brownies

My husband said these were the best brownies ever. Very fudgy and rich and pack an intense chocolate punch. Took them to 4th of July party yesterday and got other compiments also. I used Ghirardelli bittersweet chips, which I imagine are comparable to the Nestle dark chocolate chips.

Clone of a Cinnabon

Excellent. Not exactly Cinnabon, but just as good. I can't quite pinpoint what makes it not quite Cinnabon, but no matter. I did not have the problem of the filling running out like some complained of. I'm guessing they did not roll them tight enough. Another reviewer said to turn the pan over when baked to let the filling run bake in. This was not necessary for me. I did combine the butter, brown sugar and cinnamon to spread all together as someone suggested. Not sure if that made a difference or not. That method was hard to spread evenly though, so next time I'm going to try it as the recipe says. I took the advice of another reviewer who said to double the icing, but double is about twice too much. Someone must have a major sweet tooth. I think double icing would make me sick. So I will make another batch in a few days to use up the other half of the icing. I disagree with another reviewer who said the filling was too cinnamony. It was fine. The dough was pretty easy to make and came together really nicely.

Tasty Buns

Great for hamburger/sandwich buns. I made them for pulled pork my husband made in the smoker. I don't think that I care for them as dinner rolls, but my husband like them on their own, as did my 9 year old who rubbed his belly and proclaimed them "delicious". Very easy to make, too. No kneeding.
