Janet's Rich Banana Bread
I also mashed the bananas. I doubled the recipe, and used 5 bananas, which was perfect. The only other change was that I had to use about 1/2 cup of brown super because I didn't have enough white sugar on hand. I also baked about 10 minutes longer than the recipe stated. Perfect!

Quinoa Side Dish
This was my first time trying quinoa. I've heard the flavor of quinoa described as "nutty." I think it has kind of a funky, bitter aftertaste. I used chicken stock instead of vegetable broth, and dried parsley and thyme. After tasting it with the lemon juice, I decided to add some crushed tomatoes to mask the flavor. Much better.

Vegetable Curry
I eliminated the butter, salt, and black pepper. I didn't have carrots or turmeric, but would have used them otherwise. As other reviewers suggested, I added some chicken stock while simmering and peas at the end. Curry is always great with plain lowfat yogurt to tame the spiciness!
