Let's just say that this wasn't quite for me with as much liver as it asked for. The rice and everything else was cooked very nicely but next time I'll adjust the meat used.

Good with modifications: Add more salt and pepper (perhaps some chicken bouillon for additional flavor). Reserve the chicken stock you make! Don't waste! Experiment with herbs.

Poor Man's Sandwich

Oh man, I'm one of those weirdos who always has to try those foods that mix "abnormal" combinations of foods. While some have fallen flat where all you taste are the two things separately and all you think is "this isn't bad...but it isn't something I want to do again", this sandwich really blends the flavors into something enjoyable. I think they're onto something. I make this whenever I'm feeling something random and have pickles on hand.

Slow Cooker Chicken Taco Soup

Was a little bit too spicy for me. Was enjoyed by those who liked spicy food. Heavy on the spices... Definitely need the sour cream and tortilla chips to balance this out. This just missed the mark for me. If I do make it next time, I'll probably use less cayenne pepper.

No Knead Beer Bread

It definitely just fell short of all expectations. It didn't rise as much as expected, was dry, and I didn't really care for the flavor either. Not sure where I went wrong as I tried my best to follow to the recipe without any changes.

Good Old Fashioned Pancakes

My go-to recipe for pancakes. Very easy to modify the flavors with a little bit of different extract or just add fruit or nuts. Forgiving in every way so a keeper for beginners.

Pumpkin Spice Cupcakes

Thought it was pretty good but not like OMG PUMPKIN which would have been preferred. Very moist even without using oil. Followed the recipe fairly closely - only shook a bit extra pumpkin spice. The frosting came out more like icing, but that was probably my fault. All very tasty.

Chicken Paprikash

Well, I'm not so sure this review is very accurate because 1) I didn't use any onions, 2) I used chicken tenders, and 3) I only had vanilla yogurt (no sour cream). Yet, I still think it was delicious. The directions were very easy to follow. I do suggest telling people to make their dumplings about the size of dice; any bigger doesn't allow the middle to cook properly. The directions for that are somewhat deceiving because it says to "use spoons". I think I got away with using sweet yogurt because I did not have the sweetness from the onions. I will definitely try again with the proper ingredients to see how it should really taste, but not bad for using what I had!

Ricotta Cheese Pancakes

I don't know how I feel about this pancake. I did change it slightly - 2 eggs whites for egg substitute, chopped strawberries for blueberries, and a dash of almond extract. It tasted delicious, but the texture was much too soft for me (like eating ricotta cheese and mushy strawberries). I think the recipe has potential with some added body though. Just not sure of how to do that - maybe just more flour? Also, be careful about adding tooo much fruit - that adds water when cooking.

Spice Balls

This was fantastically easy even though I had never deep fried anything in my life. I'm normally quite afraid of extremely hot oil and its volatility with temperature. Even at 350 degrees, these balls cooked and browned beautifully. Crispy on the outside and super soft on the inside. I would just recommend a bit more flavor to the dough itself (if you're not going to coat in sugar). This is a simple and quick recipe when I'm craving some donuts!

Black-Eyed Peas and Gumbo

This gumbo is extremely easy and tasty! People always say gumbo is so difficult/time consuming to make because you need special things like file powder, bacon drippings, or 50 ingredients; not this recipe! Thank you for sharing Paula!! All the ingredients were extremely easy to get in my small local grocery. I took some liberties and added shrimp and andouille sausage and substituted black-eyed peas with kidney beans - still just as tasty. I would change the amount of salt too. It was a bit too salty for my taste and I would add more okra...but that's just me because I love okra. =] This recipe makes a good sized pot. I would only say this serves around 6-8 people though.

Best Brownies

Great taste and texture. Exceptionally easy recipe too! When I first took it out of the oven, I thought, "oh , another cakey brownie". But after I let it settle, it was quite chewy and fudgy. I'm so surprised it only used 1/2 cup flour!
