Super-Delicious Zuppa Toscana

O.M.G. This meal has become our households favorite! The only thing I change is Kale for spinach. I tried a less fat version by putting low fat milk rather than cream...nope, so I have done a low fat milk with butter and flour rue instead and that works..but the cream really is best. Half and half also works. Sooooooooooo delicious! Best recipe I have ever had on this site!

Chicken Tortilla Soup I

I made this recipe almost to the letter, i just left out the hominy. My husband said, "you can make that chicken tortilla soup stuff agaun anytime you want." That means "keeper" in this house! The avocado and cilantro topping is a must. Gives it that little extra something.

Chicken Breasts with Chipotle Green Onion Gravy

My family LOVED the gravy. The video sure did help this not-so-great cook. I couldn't find chipotle powder so I used a dash of red pepper flakes, a teaspoon of paprika and a dash of creole seasoning. It was a hit!

Slow Cooker Sweet and Tangy Chicken

Kids loved it! I used one bottle of barbeque sauce with the meat alone for about 3 hours in the crockpot, then added one green bell pepper and a can of pineapple chunks. I added about 1/2 cup of water with the barbeque sauce. I served this over couscous and my family loved it! My ten year old (who hates leftovers) heated it up again for lunch the next day. Great recipe and SOOO SIMPLE!!

Quick and Easy Chicken Enchiladas I

Good recipe, I make small changes. Flour tortillas for an enchilada is odd to me being a California grown half Mexican. I use corn. Heat a little vegetable oil in a frying pan and dip the tortilla in until soft (do not let get hard?) Then roll with recipe ingredients. The taste of corn tortillas is not as "doughy" as flour.

Slow-Cooked Pulled Pork Shoulder

The meat had the perfect consistency but the amount of vinegar was too tangy for my families tasts. Next time I will cut the vinegar in half or drain much much more of it out before cooking.

Grilled Corn Salad

I love this recipe. I make it slightly different. I use red or yellow bell peppers because I can't stand the taste of green peppers, and I add about half a small container of feta cheese to the salad, and a few dashes of cayenne pepper. It is perfect to accompany a barbequed dinner!

Coconut Shrimp I

Awesome recipe. I followed many of the modifications and made sure to chill the battered shrimp prior to frying. MY modification was to add PANKO bread crumbs (check your ethnic food aisle) after the beer/flour mix THEN rolled the shrimp in the coconut. It came out PERFECTLY!
