I am a 28 year old teacher/mother of two. I am barely learning to cook since my fiance's mother is a FANTASTIC cook and I figure I better learn up if I am to keep her son happy!
My favorite things to cook
I love using the slowcooker. I also enjoy cooking anything that comes out tasty after I have put my cooking-newbiw hands on it!
My favorite family cooking traditions
My grandmother made a lot of traditional tex-mex dishes and I want to learn many of them (enchiladas, tamales, menudo...) My stepfather is Italian and I am also learning many of those traditional dishes as well.
My cooking triumphs
After three major errors, I have finally learned to make an AWESOME eggplant parmesian.
My cooking tragedies
baking, baking, baking. If it doesn't come in a box where I only have to add eggs and oil its a disaster. EVERYTIME I bake from scratch, its a disaster.

Super-Delicious Zuppa Toscana
O.M.G. This meal has become our households favorite! The only thing I change is Kale for spinach. I tried a less fat version by putting low fat milk rather than cream...nope, so I have done a low fat milk with butter and flour rue instead and that works..but the cream really is best. Half and half also works. Sooooooooooo delicious! Best recipe I have ever had on this site!

Chicken Tortilla Soup I
I made this recipe almost to the letter, i just left out the hominy. My husband said, "you can make that chicken tortilla soup stuff agaun anytime you want." That means "keeper" in this house! The avocado and cilantro topping is a must. Gives it that little extra something.

Thai Cucumber Salad
I followed this recipes exactly and it was a big hit at a family barbecue. I have already been asked to make it again for the next party! Simple to make and delicious to eat!
