I hate to admit it but this weekend was the first time I went to the farmers market. There was a lot of the usual but I picked up rhubarb this time. I had it as a child but didn't think it was anything special. Now most of the deserts I make are pretty
decadent, heavy cream, lots of sugar, etc........
So I made a rhubarb and strawberry pie. As I was eating I actually said to myself, 'I am content to die' it was so amazing. I immediately took a piece to my neighbor and then I sat there for an hour with them drinking two buck chuck from trader joe's.
The balance between sweet and sour is amazing. I followed the recipe (in my recipe box) but I brought the white sugar down to 3/4 cup like one of the reviews indicates to do. I also sprinkled extra brown sugar on top of the crumble. I baked it for about
40 minutes. I hate when the edges of my piecrust get overdone.
I have heard that it doesn't last long like some other pies. It won't last long at my house either, with as much as we've eaten and given away.
