Mardi Gras King Cake

Two cakes are done and look great. I added cream cheese to the filling mixture and eliminated the butter. I substituted dried cherries for the raisins. So yummy.

Pizza Pinwheels

I served these at a kid's birthday party and they were pretty well-received. I think I need some practice rolling, cutting and arranging them so that all the cheese doesn't spill out, though. I will also try different fillers like basil, spinach, mushrooms, roasted peppers, etc.

Butter Cream Frosting II

I used real butter and shortening and it was just like what you get at a bakery. It had a nice texture and was easy to spread. I also doubled it to fill and frost a 9x13 birthday cake.

Grecian Pork Tenderloin

I was very happy with the taste, but it didn't set up as nicely as I would have liked. It was a little too loose. Next time I will puree the strawberry layer as well.

Pineapple Cookies III

Made these again (first time was a bust b/c of old baking soda) and they came out great. Interesting side note: my stoneware pan did not do these cookies any favors. The ones cooked on a regular metal pan lined with silpat came out much better - rose higher and cooked just right.

Blueberry Scones

They are a bit sticky, so adding some flour is a good idea, but be careful not to add too much. Just enough to make the dough manageable. If you're careful while mixing, you will not have too much trouble with the berries bursting. Small, wild berries don't burst as easily as the large, unnatural ones you get at the store. I use brown sugar and white sugar, too. The taste of these scones was very nice. My husband loved them.

Blueberry Coffee Cake I

With a few adjustments, this could be a really yummy crumb cake. The topping is too hard - less brown sugar, maybe add oats. The cake is a little dry - bake shorter time and maybe add some sour cream? Has definite potential.

Braided Easter Egg Bread

Wonderful! I made the dough in my bread machine to save time and effort and only put two eggs into the braid. I painted on the coloring so it didn't bleed into the bread too much. My mother-in-law actually took a picture of it! It tasted great, too.

Salmon with Brown Sugar and Bourbon Glaze

I used salmon filets, but it still turned out well. It took a little longer to cook. The glaze is very messy, so be prepared to clean up immediately.

Strawberry Cobbler II

I used fresh strawberries and made the strawberry mixture a day ahead. If you're going to do this, it saves time, but don't add the water. The sugar brings out the juice in the berries and creates its own "soup" as you've seen with strawberry shortcake. It does take longer to cook than the recipe indicates. It cooked for 45 minutes and was still a little under-done. Tasted good, though.
