Apple Crisp II

Fantastic! This is my new go to recipe for apple crisp. I, too, omitted the water and used brown sugar instead of white since I never use white sugar. Next time, I will cut down on the amount of sugar with the apples as it was a bit sweeter than I like, but it is super yummy! Guilty secret: the leftovers are incredible the next day heated up with cream for breakfast!

Grandma Rita's Soft Butter Rolls

This is the last new recipe for rolls I will ever try; they're that good. I don't use white sugar at all, so I substituted an equal amount of brown sugar and was concerned that it would have a negative effect. No need for worry. They turned out perfectly. My husband declared that he could make a meal out of just the rolls. As for me, I'm not a fan of bread products but I loved them too. Can't wait for the kids to get home from school to try them. I imagine I'll need to make another batch of them in short order. Good thing they're quick to pull together! Would give them more stars if I could!

Pork Chops Over Rice

Today was not a good day. This recipe went a long way to making it better. While on the never ending hunt for something for dinner,I discovered that we had some leftover pork chops that needed eating. Since I frequently come here for inspiration, I searched "Pork chops" and found this recipe. So glad I did! I followed the recipe fairly closely (a rarity for me), just making the odd change to make up for a lack of cayenne (I used Epicure's Cinqo Pepper Blend), white rice (used basmati) and rosemary (Epicure's Holiday Spice to the rescue) in my cupboard. After accidentally over salting my sauteed zucchini (I told you it was a bad day), I dumped that in as I hadn't added salt to the rice yet and it was pretty much perfect. I laid the pork chops on top and covered it for the last few minutes to heat them up. The chops were still moist and juicy and my husband, who rarely comments on dinner, said it was really good. That's enthusiastic praise coming from him! Thanks for an awesome recipe. Will definitely add it to my go to list of what to make for dinner.

Peruvian Style Beer Can Chicken

This was absolutely fantastic! I was a little concerned that it would be dried out, because our BBQ ran out of propane around the 1 hour mark of cooking and I didn't notice until about 20 minutes later, so I had to finish it in the oven. The chicken was tender and moist in spite of this. I have made beer can chicken several times in the past, but I never use the same recipe twice. Will definitely be using this recipe again and again!

Oven-Roasted Asparagus

Where we live is the #1 producer of asparagus in Canada, so we eat A LOT of it and I'm always looking for new ways to prepare it. This is the best recipe I've tried. I had just used the last of my fresh garlic in the chicken I was making for dinner, so I used a garlic/sea salt blend instead and didn't use quite as much salt or oil as the recipe called for. I also only cooked it for 8 or 9 minutes. It was fantastic! Even my husband, who isn't super fond of asparagus, really liked it. The asparagus kept it's colour and had a great flavour. Will be making this again in the very near future.

Rather than raisins and citron, which my family dislike, I use currants, dried apricots and dried cranberries. It's also good paired with a strong cheese, such as extra old cheddar.
