Simple Roasted Butternut Squash

Double Layer Pumpkin Cheesecake

This was absolutely delicious. I didn't make any changes other than to make 1.5 times the filling and using two prepared graham cracker crusts. I found that doing this left me with just a bit of canned pure pumpkin, so I went ahead and used the remainder of it in the filling and added an extra dash of the spices to accompany it. The texture of the cheesecake was light yet creamy at the same time, and I had no problems with cracking. I placed a pan of water on the bottom rack just to be safe. When the timer went off, I checked them then turned the oven off and left the cheesecakes for about 15 minutes. When I removed them, they were perfectly set and beautiful. Everyone at my church was impressed with this dessert! Thanks for a keeper that will be added to the Autumn rotation!

Teriyaki Marinade

I realized that I had not marinated the beef strips I intended to use in a stir fry for tonight's dinner, so I halved the recipe and added a cornstarch slurry to thicken into a sauce. It went over fabulously with the family and I will definitely be using it as a marinade or reducing it to a sauce again. The only change I made to the halved recipe was to use minced garlic in place of the powder, olive oil instead of vegetable oil, and rice vinegar in place of white. I also used a little less soy sauce to make sure it wouldn't be too salty when I reduced it. This was a good jumping point to make something with the ingredients I already had on hand. For those curious, my stir fry consisted of chopped broccoli, diced portabella mushrooms, julienned carrots, diced celery, sliced onions, and diced green peppers with thinly sliced stir fry beef that I got on manager's special at my local grocery store. Super delish!

Mexican Rice

This is a delicious recipe that is easily made because the ingredients are always in my home, except for the saffron which I omitted. I made some swaps because I had leftover ingredients that I needed to use. I substituted olive oil in place of vegetable oil, used the entirety of the cans of tomato sauce, and chicken broth instead of water. I cut the salt as a result of these swaps. Also, I only needed about 30 minutes to fully cook the rice to my family's taste. I'll be sure to make the recipe exactly when I can get some saffron; as of now, by using the recipe as a guide, my rice came out wonderfully!

This was a delicious recipe that my family enjoyed. It was very easy to prepare and I like that it can be made with ingredients that a typical household would always have on hand. Very inexpensive, and it could be customized if one should wish. Thanks for a tasty recipe!

Salsa Cube Steaks

This was a delicious new way to prepare cube steak. I found that I had to cook mine for an hour, but it was still very tender. Perhaps I'll use thinner cuts of cube steak next time? The flavors were very good and may have been better if it were marinated, but I guess it depends on what kind of salsa you use as well. Will be making this again and playing around with the recipe to find that perfect balance of flavor and tenderness. Thanks so much!

Black Magic Cake

Absolutely delicious. So rich and fragrant, and incredibly simple! I needed to let mine cook for the entire 40 minutes, but it was so moist. It stayed that way even after cooling when some cakes tend to harden or dry out a bit. I sprayed my round cake pans with plenty of Baker's Joy (the oil and flour spray), but I'm sure a similar product will do just fine. It popped right out of the pan with little crumb left behind. Fabulous, because I wouldn't want to miss a bit of this cake! The batter does seem a little thin, but it bakes up perfectly. People at my church raved and devoured this cake so quickly! Amazing chocolate flavor, and I topped with "Rich Chocolate Frosting" from this site for a really decadent experience. Try this cake, you won't regret it! It's my new go to chocolate cake!

Rich Chocolate Frosting

Even though I forgot to add the vanilla extract, this frosting was still delicious! I used it to frost a 2 layer 9 inch cake (Black Magic Cake, from this site) and a boxed yellow cake in a bundt pan; it came out fantastic. I used all of the milk and it was an easily spreadable consistency. I had no problems with a crust forming and followed the recipe. I made 3/4 of the recipe and had plenty remaining. Perfect excuse to make more baked goodies to use this wonderful frosting up! Thanks for a fantastic recipe.

Angel Food Cake III

This cake was absolutely delicious, so light and airy and perfectly sweet. I baked in loaf pans and didn't have much trouble with removing the cake (we were prepared to serve from the pan just in case) by running my knife along the edges and having dusted with flour beforehand. I didn't have cake flour or cream of tartar on hand, so I used substitutes for both. I used 1 tablespoon cornstarch and the rest of the 1 cup all purpose flour. I replaced the cream of tartar with lemon juice after searching the internet for a suitable swap. Really, I decided to make the cake so I wouldn't waste leftover egg whites from baking other desserts that called for yolks only. I'm so glad I did, the cake was a hit!

Marinated Baked Pork Chops

This was a good recipe. It'd be a great starting point as other reviews have mentioned because preparing it as is, the flavors of the dish don't really pop. Four star rating because it was pretty tasty considering the lack of fresh ingredients (I did use fresh lemon juice, though) or spices in the recipe. The meat was tender, but a had a bit of oil lingering from the pan (perhaps I did not trim the chops enough, maybe it was the addition of oil in the sauce). I served with a simple green salad. Overall, I would make this again with some tweaking of my own. Thanks for a new dinner recipe!

Sweet Potato Pie I

Delicious pie. Made this for Thanksgiving and have been requested to make another. Only change I made was to use 5 tablespoons butter instead of the half cup. I used Butter Flaky Pie Crust from this site as the unbaked shell. Wonderful flavor! Thanks for sharing!

Butter Flaky Pie Crust

Fabulous pie crust. I didn't need all of the water, as it appeared to come together without it. It was flaky and delicious. I've used it to make an apple pie with a lattice crust, as well as a sweet potato pie in the oven right now for Thanksgiving. I'll be using this recipe again and again. Thanks for sharing!

Apple Harvest Pound Cake with Caramel Glaze

Extra-Yummy Fluffy Pancakes

These were good. Seemed sort of dense, even though I followed this recipe exactly. Still, they made a pretty pancake that was edible and somewhat enjoyable. I'll keep looking for that perfect pancake, though.

Ruby Drive Sloppy Joes

My family and I adored this. No more canned sauce for us! I did have to use about twice the amount of ground beef as the recipe seems to make quite a bit of sauce. I quickly discovered that I didn't have the white vinegar, dijon mustard or brown sugar so I used rice vinegar, spicy brown mustard, and plain white sugar. I did mix all of the ingredients for the sauce together beforehand, let them marry while I was browning the beef, then added it as directed. I sprinkled salt and chili powder onto the meat as it cooked, and added minced garlic and a few spices to balance the flavors to my family's taste. Love on a bun!

Fresh Southern Peach Cobbler

This was a really good cobbler. I've only made it once but I would definitely make it again. There is room for improvement, however, just for my family's tastes. They like things slightly sweeter. As always, make sure your peaches are ripe.
