Kansas Tomato Sandwich

I've eaten this sandwich my whole life. I do use sharp cheddar cheese instead and add pickle. I usually hate it when people give a recipe five stars but then say they make a bunch of modifications. However, since I was born and raised and still live in Kansas, I figured it would be okay in this instance! :)

My Favorite Mexican Rice

Seven Layer Tex Mex Dip

This is a great dip. I took it to a 4th of July party and everyone enjoyed it. I used vegetarian refried beans, light mayo and sour cream, and 2% sharp cheddar cheese. You won't be disappointed in this recipe - yummo!

Cheddar Ranch Dip

This is excellent. Will definitely make again. I served with baked potato wedges. Used light sour cream, 2% sharp cheddar, and real bacon crumbled (four slices). This recipe is a keeper!

California Taco Dip

I added a bit of water just to make the refried beans easier to spread. I used vegetarian, fat free refried beans, low fat sour cream and mayo, 2% cheese and left off the green onion (which is just a personal preference). Took the dip to a party with Tostito Scoops - it was well received. Will definitely make this again.

Easy Chicken Tetrazzini

This is a great recipe! I used whole grain thin spaghetti, 98% fat free cream of chicken soup, and 2% cheddar (I added the cheese at just the end of the baking time). Will make again!

Nanna's Banana Bread

I did not have buttermilk on hand, so I measured 1 Tablespoon of lemon juice in a liquid measuring cup and then added milk to the one-cup line. I let it sit about 10 minutes then measured slightly more than 1/2 cup. The bread turned out great! Very moist and delicious!

Stovetop Granola

This is a great recipe and easy to make. I tried a granola recipe on Quaker's website and it wasn't nearly as good as this one. Just be sure to keep close watch when browning the oats. I had to throw my first batch out because I let the oats get too brown and consequently, they had a burnt taste. I used some leftover brazil nuts and dried peaches and cherries. It was awesome with Greek yogurt!

Acorn Squash with Apple

Everyone enjoyed this dish at Thanksgiving. I had a butternut squash that needed to be used. I followed the same directions to soften the skin and then used a peeler to remove it. I used pecans because that's what I had in the freezer. I had one gala apple and one red delicious. The gala apple looked prettier after cooking, but the two different kinds complimented each other well. I did double the butter, nuts, and brown sugar.

Cajun Pasta Fresca

This is good and healthy - will make again. I added mushrooms, zucchini squash, and shredded carrots. I left out the mozzarella and used shaved parmesan. My hubby who is a meat eater enjoyed it. Definitely add the cajun seasoning - it gives it a nice kick!
