Chicken and Broccoli Alfredo

This recipe is easy to make but the cream of mushroom soup was overwhelming even after adding more parmesan cheese. Didn't taste like the traditional alfredo sauce at all. I'm deleting this recipe from my box.

My Favorite Mexican Rice

Easy and Elegant Pork Tenderloin

I was disappointed with this recipe. The pork was not dry but the breading just didn't add anything special to me. We ended up scraping it off. I am deleting this recipe from my box.

All Day Macaroni and Cheese

Jam Filled Butter Cookies

These cookies are very good and easy to make. As recommended, I did let the dough sit in the refrigerator about 15 minutes before forming into balls. I rolled half in chopped almonds before making the intention (I used my thumb) and filled with apricot preserves. The other half I filled with three berry jelly. After they were cooled, I dusted those with powdered sugar. Nobody preferred one over the other - both got favorable reviews. I will make these again as they are fun to experiment with.

Acorn Squash with Apple

Everyone enjoyed this dish at Thanksgiving. I had a butternut squash that needed to be used. I followed the same directions to soften the skin and then used a peeler to remove it. I used pecans because that's what I had in the freezer. I had one gala apple and one red delicious. The gala apple looked prettier after cooking, but the two different kinds complimented each other well. I did double the butter, nuts, and brown sugar.

Grandmother's Buttermilk Cornbread

This cornbread is very good. Well received at Thanksgiving dinner. I made it exactly as the recipe calls for, including mixing all ingredients in the skillet. I baked it in a glass pan for 30 minutes.

Seven Layer Tex Mex Dip

This is a great dip. I took it to a 4th of July party and everyone enjoyed it. I used vegetarian refried beans, light mayo and sour cream, and 2% sharp cheddar cheese. You won't be disappointed in this recipe - yummo!

Best Ever Muffins

These muffins are very easy to make. I had a bag of frozen berries that needed to be used up - I defrosted the fruit ahead of time and mushed with a fork before mixing in to the batter. I followed a previous comment to heat the oven to 425 first, then reduce to 400 when you put the muffins in. This seemed to be a good strategy - the muffins were a perfect shape when finished. I will make these again with other add-ins. Also, I did not use paper cups, just sprayed the cups in the pan with non-stick spray.

Cheddar Ranch Dip

This is excellent. Will definitely make again. I served with baked potato wedges. Used light sour cream, 2% sharp cheddar, and real bacon crumbled (four slices). This recipe is a keeper!

Cajun Pasta Fresca

This is good and healthy - will make again. I added mushrooms, zucchini squash, and shredded carrots. I left out the mozzarella and used shaved parmesan. My hubby who is a meat eater enjoyed it. Definitely add the cajun seasoning - it gives it a nice kick!

California Taco Dip

I added a bit of water just to make the refried beans easier to spread. I used vegetarian, fat free refried beans, low fat sour cream and mayo, 2% cheese and left off the green onion (which is just a personal preference). Took the dip to a party with Tostito Scoops - it was well received. Will definitely make this again.
