Gingerbread Cupcakes with Cream Cheese Frosting

I can't rate this properly as I messed it up by using brown sugar and just reducing the molasses. No good, it's still way too strong. I'd also reduce the nutmeg and allspice if I did it again as I felt these overpowered the ginger. Not great. Maybe better if you use white sugar as the recipe says!

Cranberry Pudding

This was a really nice, easy, basic recipe. I had some fresh cranberries that I had enthusiastically bought on sale and didn't feel like making anything too heavy, so this was perfect. I made a few small modifications to suit my tastes. I added the zest and juice of a small orange to the cranberries once they'd been halved, as well as about half a teaspoon each of ground ginger, cinnamon and freshly ground cardamom. I then microwaved this mixture for 2 minutes and let it sit while I prepared everything else. Was really fast and easy to prepare, turned out lovely, light, delicate and a lovely mixture of flavors. Made the brown sugar sauce exactly as described and it was delicious as well. I thought afterwards that I could have used orange juice for that instead of water and that would have been nice too.

Banana Pancakes I

These are a fast favorite with me and my fam now. I never add the sugar as I feel it's unnecessary since the bananas add enough sweetness. I've also tried variations with adding chopped walnuts or raisins, or replacing half the milk with coconut milk for a different flavor. Even without adjustments though the basic recipe is super, and very kid friendly.

Maple Salmon

Absolutely amazing. Sometimes simple is best and this is one of those times. The best way to do salmon. We had it with simple mashed potatoes and grilled fennel. We used good quality ingredients and it was a gourmet restaurant style meal. Wonderful. I can imagine so many variations in terms of sides.

Chocolate Chip Shortbread Cookies II

Deeeelicious! I have to admit I adjusted the recipe quite a bit, but they turned out so perfect, I'll definitely try the recipe again. I didn't have vanilla or coconut extracts, so I used a carob and orange liqueur I had bought while on holiday (3 tsps), cinnamon (1 tsp) and cocoa (1 tbsp). The toasted pecans were so tasty I added a few extra, and I didn't have chocolate chips so I broke up a slab of lindt dark chocolate that had nuts and maybe bits of peel (?) in it as well. I also used brown sugar as I didn't have confectioners sugar. The result was fantastic. Really, really, tasty. My only regret is that I had scaled down the recipe so much as they didn't last long! I think I will make a Christmas version later on with orange essence and spices.

Zucchini Yogurt Multigrain Muffins

Absolutely fantastic! I can't stop eating them, they're so good! I didn't have quite a full cup of zucchini so I used more carrot. Also didn't have the other types of flour so I used 1 cup self-raising and 1 cup of porridge oats. No applesauce either so I just used 1 cup oil. I didn't add honey and I used walnuts instead of pecans. They are absolutely perfect though. I will definitely make these again... and again, and again!
