Russian Mushroom and Potato Soup

I didn't make this exact recipe, but I'm going to review it anyway. I used mostly the same ingredients, but I added turnips because I had a ton of them in the fridge. I used two small yellow onions in place of leeks and let them caramelize over low heat for about half an hour before I added the other ingredients. I didn't use butter or half and half, but I pureed about half of the potatoes, turnips, and onions and the soup is wonderfully thick and creamy. I also added a tiny bit of crushed red pepper, ground mustard, and dried sage, and I used vegetable broth (I'm a vegetarian). Overall, this soup came out DELICIOUS, and super low fat! The only fat used was about a tablespoon of olive oil to sweat the onions. Probably going to make this again.

Stewed Cabbage

Very good. I used this as a jumping-off point for a Middle Eastern interpretation. I added about 2tbsp of zataar, a LOT of garlic, a can of chick peas, and about a tbsp of harisa. Simmered for probably half an hour until the tomatoes had sweetened up. Delicious!!

Roasted Okra

Because of this recipe, I can now honestly say I have never met a vegetable I don't like. Almost all of the slimeyness that turned me off from okra in the first place was completely eliminated between the roasting process and soaking the okra in acidic water (as some reviewers suggested). The resulting texture was toothsome and silky at the same time. Delicious!

Kettle Corn

This recipe is dead simple and absolutely delicious. The first two times I made it, I accidentally used only 1/4C popcorn kernels which resulted in a totally burned, terrible mess. Third time was a charm! I've got a huge bowl of the stuff sitting in front of me now. :) Super crispy, perfectly sweet, and perfectly salty. Will be making this again.
