Spicy Tuna Fish Cakes

We had some fresh tuna baked seasoned with Mrs. Dash, not canned. We did not care for the mashed potatoes in the recipe. It gave it a mushy soft texture on the inside. I unintentionally failed to add the cayenne pepper. I am going to try recycle the leftovers, add an egg, crushed crackers, jalapenos, & grated cheese & re-fry in the olive oil.

Key Lime Pie VI

Husband's favorite dessert, so I decided to make one totally from scratch for his birthday vs. buying one like usual, but wanted fewer calories than other recipes. I didn't have the greatest luck with this recipe. Besides being extremely labor intensive, used suggestion of doubling lime juice, attempting to hand squeeze all, but ended up filling the rest with store bought juice. Getting a T. of lime zest took a long time. Pudding didn't set over night, so had to spoon out of the shell, cooked longer adding 1/4 c. sugar because it was so tart, a little corn starch & water to thicken, fixed the setting problem, but it and the overly sweet meringue made it too rich for my preference. If I were to make again, I'd follow directions to a T, but would probably leave out the zest, cook the pudding longer the first time & cut the sugar for the meringue in half.

Drop Biscuits and Gravy

Trying to go healthy, substituted the butter with coconut oil. Were still good with my own gravy & butter & jelly, but weren't flaky as hoped, more breadish. Will try the next time using butter.

Oatmeal Banana Nut Bread

Preferred it as muffins, less bake time & more even baking. Tripled the recipe & got 2 loaves & 18 muffins. Some baked too long & there was less flavor than in those only baked to a slight golden brown. Took me more in prep time than cook time. Didn't find mine to burst with flavor, but does taste guilt-free!
