Bison Fajitas with Guacamole Salad

Amazing, totally amazing. This is the first time I have ever tasted bison and I can honestly say I'm hooked. At first I really didn't know what to expect from the bison flank steaks; however, now I can tell you this, it does not taste gamy at all. In my opinion it tastes more like beef. This recipe is definitely a keeper. I did use the "Fajita Seasoning" from AR by trmeeds and grilled the flank steak whole and sliced after cooking. The rest was made per the recipe. The fajitas and guacamole salad are definitely keepers. Thank you Bison Council.

This is an awesome sandwich that is equally good with other meats such as pork or beef. The pickled veggies along with the cilantro make this sandwich. I did add chili garlic sauce to the mayo.

Vietnamese Chicken Cabbage Salad

Great summertime cabbage salad. It does need a little more lemon. Knowing that Vietnamese cuisine uses cilantro (ngo) I chopped some up and added it to the recipe which made it 5 stars. Either way it's good.

Family Favorite Sloppy Joes

This is a really easy recipe and the sweet pickle relish adds another dimension. Next time I will cut back the brown sugar to 1/4 cup. It was a bit on the sweet side.

Surf and Turf for Two

I followed the recipe exactly as written except for the steaks. I used NY strips in place of the filet mignons. The shrimp marinade was absolutely perfect. The shrimp was the star of this 5 star meal. Thank you Staci.

Confetti Beef Taco Salad

This was pretty good but I felt that it was still missing something. Maybe jalapenos, sour cream, salsa or some of Valerie's Kitchen Creamy Tomatillo Avocado Salsa. It definitely needs cilantro.

HERDEZ® Mexican Cornbread

Moist and flavorful. The pepperjack and Tomatilla Verde Mexican Cooking Sauce give this just the right amount of spices for a little kick without over powering the cornbread. Paula what a great recipe. This will be my go to cornbread when I want a Mexican flair.

HERDEZ® Three Pepper Cheesy Stuffed Jalapenos

I have eaten my share of cheese stuffed jalapenos but I must say that the HERDEZ® Red Guajillo Chile Mexican Cooking Sauce put these over the top. These will be my go to jalapeno appetizers. I might add that the cheese mixture also makes for a great warm dip on it's own. Thank you for a great recipe GreenGirl24.

HERDEZ® Creamy Tomatillo Avocado Salsa

Absolutely perfect. This Creamy Tomatillo Avocado Salsa is great as a dip and can be used as a topping for tacos, taco salads, enchiladas or any other Mexican recipe. I'm even going to try this on a burger. This delivered just the right amount of spicy heat for me. It took me longer to wash off and spin dry the cilantro than it did to make this recipe. The Greek yogurt works well and no doubt sour cream would work as well. This will be my go to dip and topping. I'm going to stock up on the Herdez Tomatillo Verde Cooking Sauce for this one. What a great recipe Valerie!

Grilled Lemon Herb Pork Chops

Perfect! Marinated for 24 hours and cooked loin chops to 145 degrees. The marinade paired well with the pork without over powering the juicy chops. Will definitely make these again.

Hamburguesas Mexicanas

Easily one of the best burgers I've had with slight changes. I grilled the burgers on the BBQ, added garlic salt to taste in the guacamole and used lightly toasted sandwich thins. Great recipe. Thank you DonnaB.

Barbequed Cabbage

I know this said to cut into thick shreds but I wanted that smoky charred flavor and I thought the wedges would photo better before I cut them into thick shreds. I grilled the cabbage wedges until slightly charred prior to cooking as outlined in the recipe and topped with crumbled bacon. This turned out great. Thank you ericasalad.

BBQ NY Strip

Marinated the steaks for 2 hours. This marinade overpowered the natural steak flavor of a NY strip. Not my thing, but not terrible we still ate it. Back to my old way of making a strip steak with butter, garlic salt and pepper.

Baked Slow Cooker Chicken

I made a 5 pound bird in a 6 1/2 quart slow cooker. Marinated it in orange, tangerine and lemon juice with sliced onions and chopped cilantro. After reading most of the reviews and knowing that the size of the chicken and varying temps of slow cookers I decided to place a probe thermometer in the bird to keep from over cooking it. I did place it on foil balls knowing I didn't want greasy veggies from the rendered fat. Placed the slow cooker on high for the first hour then switched to low. The 5 pound bird took a total of 4 hours and 20 minutes. Although this was OK I think I'll stick with my rotisserie cooker.

Quick and Easy Mexican Pizza

I really didn't find it necessary to fry the flour tortillas for a quick snack, although I'm not opposed to frying them. 8 minutes in a 400 degree oven and they turn out with golden brown crispy edges. I used a Mexican blend shredded cheese. A great snack or appetizer.

Calico Slaw

Although this slaw is packed with nutrients it lacked in dressing. I had to double the dressing with a little less sugar. If you want to impress company this colorful slaw will work.
