Slow Cooker Mashed Potatoes and Cauliflower

Fluffy little clouds of goodness. Perfect mashers for those lazy days using the slow cooker. I will be making these again. I like the idea that the sour cream is not over powering. Today's slow cookers cook at a higher temp. This was done in a little over 4 hours.

Green Turkey and Cheese

Made as is and the results were a rather bland recipe. After tasting this I added Sriracha which seemed to help the flavor a bit. If I were to try something like this again I would use cabbage in place of the spinach along with some onions and seasonings.

Spicy Buffalo Dip

I substituted sour cream for the Greek yogurt as stated in the footnotes and was only going to give it 4 stars but this combination of flavors had me going back for more. This was great on tortilla chips and would be equally great as a dip for fries or as a spread on burgers.

I do believe that the 2 tablespoons each of the spices are way off. I initially made this with one tablespoon of each and it was still off. Perhaps teaspoons would be in order but I'm not sure.

Tomato Salsa without Onions

This delicious salsa would not only be perfect for a dip but it would also brighten up meats, fish, soups and more! The roasted pepper adds a nice smoky flavor with subtle heat in the background.

Wow, I could eat the entire bowl. This is that good. Such a versatile recipe that the heat and lime juice can be adjusted to your liking. Definitely a keeper! Thank you mommy for such a great recipe.

Homemade Taco Sauce

A great tasting sauce without having a prominent vinegar flavor as some major brands do. The sauce wow factor can be changed by adding or subtracting the amount of cayenne. This has a mild spiciness as per ingredients so next time I will double the cayenne. This has a good consistency that will hold well on your tacos or even as a dip.

Crunchy French Onion Chicken

I have always wanted to try this recipe and just got around to it. Figuring that the coating would be very delicate I floured the chicken before dipping in the egg and french fried onions. I also placed the chicken on a cooling rack, sprayed with non stick spray, above a cookie sheet so I wouldn't have to turn the chicken during baking and chancing damaging the coating. If you don't have a cooling rack try using sliced raw onion rings to place the chicken on. The results were favorable however I may add seasoning the flour next time.

Spicy Cauliflower Bites

This turned out good and baking them in muffin tins worked great. I did add a little more than the 1/8 teaspoon of red pepper flakes knowing that wouldn't be enough. Next time I make this I will mix in cheese to the mashed cauliflower prior to baking.
