Mini Rotini with Carrots and Peas

Can't quit figure this one out. I always have Barilla pastas on hand. This was lacking in the flavor department. I'm not quite sure what to add to give it the flavor it needs but I'll work on it.

Campfire Pepperoni Pizza

Went over to the kids house where they have an open fire pit and gave this a try. I didn't have a pizza stone so I used a comal (cast iron flat griddle) and the smoky goodness turned out perfect. The grand kids had fun with these.

Spicy Watermelon Salsa

I was getting ready for a Memorial Day BBQ in honor of the fallen when I came across this recipe and thought I would give it a try. I am so glad I tried this. The flavors are unbelievable. This recipe is at the top of my Memorial Day menu. Forget the chips, just eat it out of a bowl with a spoon. Thank you FrackFamily5 for an awesome recipe.

Family Ties Chipotle Deviled Eggs and Bacon

The combination of ingredients made some great deviled eggs. The best part of this recipe is being able to control the amount of chipotle sauce in the egg mixture. Instead of crumble bacon on top I cut some bacon into small squares, dipped them in the chipotle sauce, and place on top of the eggs.

Amazing Muffin Cups

These turned out great. Perfect crispness on the hash browns with a butter flavor. I do think the cheese is a bit of an overload and took the suggestion of Baking Nana and cut back on the cheese. I didn't measure the cheese - just eyeballed it. Not being sure about the eggs I poured them level with the muffin tin and they looked great. This recipe turned into a perfect nonstick delight. Adding to my TNT folder.

Ashley and Whitney's Popcorn and Pretzel Sweet Snack Mix

This snack mix is truly addictive. I did thin the chocolate a bit with milk, as one reviewer suggested, in order for the mix to get properly coated. The parchment sheets made for an easy clean up. I served this mix in fry baskets lined with parchment paper.

Braised Corned Beef Brisket

Fork tender, melt in your mouth goodness. No doubt this recipe will rise to the top of the charts. No more boiled corned beef for me. This is such an easy foolproof recipe that anyone can make it and look like a star in the kitchen. I did follow Baking Nana's advice and triple wrapped it in heavy duty foil.

Bill's Beefuna Burgers

I thought something was fishy about this recipe when it was pointed out to me by happschmoopies. This was faceless at the time so I decided to give it a go. For taste I would give it five stars but for directions only 4. These definitely need a binder. Don't even try them without a binder or you will just have a crumbly mess on your hand. I noticed that some reviews said that these tasted too fishy. Well I suppose if you are using cheap tuna. Tuna shouldn't taste fishy, it should taste like tuna. I used solid white tuna packed in water to which the tuna complimented the beef. If you are looking for a juicy drip down your arm burger this isn't for you. The tuna does absorb some of the juiciness. Nevertheless a good and tasty burger. Thank you WHATS HIS FACE for something different for a change.

Karen's Rolled Sugar Cookies

These turned out good. At times I can be a bumbling fool when it comes to baking cookies so I read all of the reviews. I used a whole egg and when the dough mixture looked to be the right consistency for rolling I stopped adding the flour mixture to keep it from drying out. I used "Sugar Cookies Icing" here on AR to ice them.

Patsy's Cauliflower Salad

I made this in the a.m. and ate it in the p.m. to give it a chance to come together. I'm not quite sure what this needs but I found it to be a bit bland. Then again, what the heck do I know? I think everything needs some spicy heat. Maybe more onions and radishes. I'm not even sure what the standard is for radishes in a bunch. Oh well, I will try this again and add some diced jalapenos.
