Spinach and Beef Lasagna

The flavour on this dish is fantastic and flavour wise it should be 5 stars but there are some problems with the recipe itself. It calls for ½ lb. of ground beef I increased it to 1 lb. and still felt that it was skimpy. The recipe calls for ½ cup dry parsley this is way to much I used 1 tbsp. think next time will double this. I have never seen a 45 oz. jar of spaghetti sauce so I used a 28 oz. jar of spaghetti sauce and a 28 oz. jar to tomato sauce the extra worked great as I used 15 oz. of fresh spinach instead of frozen. Now for the instructions. There is no indication on what to do with the onions for I fried them up along with mushroom the beef and spices. Now for the layers as written there is no way that you can use ½ the amount of meat sauce in the layers and still have some for the top. The way it should read is as the following: small amount of sauce on the bottom of the pan, noodles, 1/3 of meat sauce, ½ of the cheese mixture, noodles, 1/3 of meat sauce, remaining cheese mixture, noodles and remaining of the meat mixture. Bake as pre the recipe instructions. I will be making this again.

Bread Pudding with Praline Sauce

I had been looking for a Banana Bread Pudding recipe and made a couple of alterations to this recipe. I reduced the vanilla extract to 2 tsps and added 2 tsps of banana extract. Instread of raisins I added to 2 cups of sliced banana which I had tossed with a little lemon juice. It worked out perfect.

Potato and Cheddar Soup

Excellent, simple and fast soup. Full of flavour. The only change I did was use thin skin potatoes and the skins on.

Curried Corn

I did this recipe twice this week. Emjoy by all..Only thing I would suggest is check your curry. I have a medium level so I used less then what the recipe calls for.

Roasted Chicken Rub

This is a great rub. I had to do a couple of tweaks. Since I am restricted on salt did not add the salt also did not have celery flakes so I used 1/2 tbsp. of celery seed which ground up perfectly in the small blender. I used this mixture on a boneless pork shoulder roast which I roistered on the BBQ. DS#2 had been outside and came to me said that dinner smelled wonderful and he could not wait for it to be ready. The pork was full of great flavour and very moist. Will be making again. Thank you Semigourmet for this wonderful rub.

Light Lemon Pesto Pasta

Just loved this recipe. I used Parmigiano-Reggiano cheese and capellini as the pasta. After mixing the pesto with the pasta in the pasta pot I added additional grated Parmigiano and mozzarella. Then replaced the lid and allowed the cheese to soften. Will be making again. Thank you Baking Nana for this recipe.

Deluxe Corned Beef Hash

Wow this is fantastic. Family just raved about this recipe. Just a word on this. I had used may largest fry pan and found that as I had put the meat in it was not going to be big enough. Had to use my large stock pot. It worked great for me. Will be making again.

Peanut Butter Cake I

I found this cake very dry but had a good flavour. If I make it again will add more milk to it. When I tried to poured the batter in the pan I had to scrape it out of the bowl just to get it into the pan.

Family Casserole

Family loved this recipe. Fast and easy to put together. I sub the broccoli and water chestnuts with frozen peas and corn. I also added carrot and squash which I had in the freezer. Shows have versatile this recipe is. Thank you for sharing.

Ultimate Guinness® Beef Stew

Wow loved this recipe. The house smelled great while this was cooking. Only change I made was add some mushrooms because we loved them. Also before I had heated the oil and bay leaves I had prepped the meat, onions and mushrooms ahead of time this to prevent the burning of the bay leave as per one reviewer had mentioned. Then as they were frying prepped the tatters and carrots. Will be making again.

Italian Chicken Marinade

Wow this is great. Used Kraft Zesty Italian dressing and 1/2 tsp. of minced garlic (instead of garlic powder). Also had 4 boneless chicken legs and a large boneless breast. There was plenty of marinade for the whole lot. DS#2 BBQ the chicken after it marinated for about 6 hours. Meat was juicy and great flavour as the dressing did not over power the chicken. Will be making again.
