Parmesan Chicken II

My husband said "I think these may be the best drumsticks I have ever had." I parboiled in salt water before baking as another reviewer suggested. I also made them with 2 parts parmesan cheese 1 part seasoned bread crumbs. Delicious and super easy!!

Summer Vegetable Salad

Y-U-M-M-O! It tastes very fresh! I used the same ratio of ingredients for the dressing but scaled down to 1 serving size. I chopped vegetables for my husband and myself, added 2 cups of chopped lettuce for good measure and poured the scant amount of dressing over it all, tossed and let it chill for half an hour before eating. Delish! I can't wait to use fresh basil next time...I only had dried on hand and used a bit in the dressing. A new 2010 Summer staple.

True Blue Custard Crunch Pie

Peanut Clusters

If you bought raw peanuts, simply put them on a cookie sheet for 15-20 minutes shelled, 20-25 minutes unshelled. I prefer nuts in this recipes that are not overly salted Planters type nuts. Freshly roasted nuts - two words. Yum. Oh.

Chicken Enchiladas

HUsband gave it a 5 star rating, said it was better than any enchilada he's ever had..restaurants included. Made it with shredded pork loin and a mild green chile enchilada sauce. Yummo!!

Cinnamon Swirl Kuchen

TASTY! I used all butter as with a cake like this is it crucial I think to have full flavor fresh ingredients. I sifted the flour, used Baking Pam to help ensure quick release, and made extra cinnamon sugar for the filling - 1/2 cup sugar to 4 teaspoons cinnamon. Be patient and watchful...the cooking time will depend on the pan you are using and your oven. I cooked for 1 hour 5 min. Even my uber picky 7 year old asked for a second slice and declared it to be awesome.

Peanut Blossoms II

These are a Christmas classic. I roll the dough in red and white rock sugar before baking to make them a bit more festive. And I always make a double batch so I have enough to make Peanut Butter Cup Cookies as they are the axact same recipe.

Baked Spaghetti

I made it with Classico Four Cheese sauce and left out the extra onion, garlic and peppers as I am trying to coax a picky 8 year old and 17 month old to eat with us. Success! I used non stick spray in the pan instead of foil (have you seen what they are charging these days?!) and had zero problems with sticking. There was plenty of sauce and lots of leftovers. Next time I will make two 9x9 pans for our family of four and will put one in the freezer for a crazy, no time to cook kind of day. This one is a keeper and will put it into our rotation.

The Best Lemon Bars
