Tangy Chicken Fajitas

I wanted to like it..really I did. But the vinegar overpowered; pungent rather than spicy. I would not make this again. I continue my search for the ultimate chicken fajitas.

Pumpkin Oatmeal

Like another reviewer, I liked the idea of pumpkin (my favorite)in my oatmeal (my second favorite?, but didn't like the 'rawness' of the pumpkin flavor. My solution? Make a batch of Libby's pumpkin custard usng the recipe on the back of the can. You make your regular bowl of oatmeal and add 1/2 cup of the custard mixture to it. You get double the amount of pumpkin for breakfast and it is PERFECTION in a bowl... and relatively guilt free.

Dry Rub for Ribs

Gave the meat a good flavor and kept it juicy...not the typical rib meat and bottled BBQ sauce dinner. We made the recipe exactly as written. Five stars!

Best Ever Chocolate Cutout Cookies

This is a great recipe and I will make it again. I had no problem with the consistency of the dough and followed the recipe to a T. Make sure you use only room temp softened butter, measure the exact amount of ingredients (no eyeballing it) and chill the dough for 2 hours. TIP! Cover the dough in wax paper in the fridge during chilling. After you pull it out, roll it between 2 sheets of wax paper. You have no issues with sticking, flour doesn't mar the pretty brown dough. Thanks for sharing your Grandmother's recipe! She was a great cook!!

End of the Line Ham Casserole

This was a decent dish with everything that I needed to use up. It was a bit on the salty side but most dishes made with cream soups are. We'll make it again. :)

Blueberry Coffee Cake III

Parmesan Chicken II

My husband said "I think these may be the best drumsticks I have ever had." I parboiled in salt water before baking as another reviewer suggested. I also made them with 2 parts parmesan cheese 1 part seasoned bread crumbs. Delicious and super easy!!

Summer Vegetable Salad

Y-U-M-M-O! It tastes very fresh! I used the same ratio of ingredients for the dressing but scaled down to 1 serving size. I chopped vegetables for my husband and myself, added 2 cups of chopped lettuce for good measure and poured the scant amount of dressing over it all, tossed and let it chill for half an hour before eating. Delish! I can't wait to use fresh basil next time...I only had dried on hand and used a bit in the dressing. A new 2010 Summer staple.

Peanut Butter Popcorn
