Turkey Brine

For extra flavor add 1 half gallon apple juice and 1 half gallon cranberry juice,(or 1 gallon Ocean Spray CranApple juice) around 10 whole cloves, black pepper (to taste, but be careful), and brown sugar (2 cups packed) Also, by adding additional liquids (cranberry and apple juice) it is important to add an addotional cup of salt (2 total) Replace the ice water with 1 gallon water straight from the faucet. Boil all ingredients until the salt and sugar are completely dissolved and the cloves are releasing their oils. Remove from heat and let completely cool before brining the turkey. Also, with a strainer, remove the whole cloves before brining or you may find yourself biting into a clove which is not pleasant.

World's Best Pasta Sauce!

I made this just for kicks to see how other people make their sauce. This was just OK at best. First of all...there's already enough fennel seed in Italian sausage that adding more is complete overkill. And it's definitely lacking ingredients for a full, rich sauce...such as...bell pepper, mushrooms, fresh Italian basil, fresh spicy oregano, fresh parsley, and a bit of red wine. (by the way...red wine is what should be used instead of sugar) Also...1/8 to 1/4 cup olive oil in your sauce will keep it from coagulating and also makes it a healthier recipe. A couple pinches of black pepper and fresh thyme sprinkled on the sauce when served finishes it off.

Scalloped Potatoes with Parmesan Cheese

The basics of this recipe are a good foundation. All I did to give it more flavor was add diced green onions, bacon bits, chopped sweet onions, smoked paprika, a couple pinches of black pepper, and fresh grated parmesan cheese.

Scalloped Potatoes II

Good starter recipe. Add sour cream, Onion soup mix, cream of asparagus or cream of broccoli soup, black pepper, and top with monterey jack cheese to make it pop.

Mascarpone Stuffed French Toast with Peaches

I've made this 7 times with 7 different fruits (peach, strawberry, blueberry, orange, apple, mango, and papaya)...and each time it's delicious. Definitely a crowd pleaser and keeper.

Home-Style Scalloped Potatoes

Very good. I prefer my scalloped potatoes with a little heavier sauce so instead of 5 cups milk, I used 2 1/2 cups milk and 2 1/2 cups sour cream. I also added green onion and diced ham for a little extra flavor.

Spicy Sausage and Rice Casserole

I used spicey italian sausage and added mushrooms and sweet cherry peppers (to counter the heat) and topped it with panko crumbs and shredded mozarella and parmesan cheese. It was a very tasty casserole.

Pork Tenderloin with Pineapple Salsa

Freezer Caramel Drizzle Pie

I do not care for coconut or pecans. So I made my own version of this and it was incredible. I replaced the coconut with white chocolate shavings and dark chocolate shavings. I replaced the pecans with chopped macademia nuts and chopped dehydrated banana chips. Saute the the macademias and banana chips in butter and do not melt the chocolate shavings. For those of you like me who don't like either or both coconuts or pecans...give this a try by substituting one or both. It is mmmm mmmm good.

If you really want to kick it up...add apple juice, whole cloves, lemon juice, ground sage, rosemary, and thyme. Then (and this is key) stuff turkey with apples, oranges, lemons, and onions...and cook it BREAST SIDE DOWN

Stuffed Eggplant with Shrimp and Basil

This was pretty good the first time I made it...but it seemed to be lacking flavor. So I made it again and tweeked it by cutting down on bread crumbs and adding more shrimp, chopped sweet onion, diced zucchini, diced red bell pepper, and a little mild ground italian sausage. I also added an egg to the stuffing to bond it. The extra flavor really kicked it into gear.

This is a good recipe. I substituted sweet basil for the mint and added cilantro to counter the sweetness of the brown sugar. All in all...definitely thumbs up.

Banana Pancakes I

These were good. I was surprised they came out as fluffy as they did with the banana in the mix. I use a food processor and puree the bananas rather than mash them. It gives the pancakes a smoother texture. Also, I made these a 2nd time and added strawberries for strawberry / banana pancakes.

I've been making something very similar to this since I was a kid (a looooooong time ago) but I use peanut butter instead of butterscotch and chow mein noodles instead of pecans. And no condensed milk !!!

Pepperoni Stuffed Zucchini

I took the basics of this recipe, and really tweeked it a lot. I did use some pepperoni, but also used sweet itaian sausage, added mushrooms, garlic, and red bell pepper. Also, after scooping the meat of the zucchini out, I put a layer of grated mozarella inside the skins, then added the remaining ingredients. This gave the sausage, pepperoni, and the rest of the fillng something to grab on to. I finished by topping with fresh romano cheese.

Mom's Best Waffles

If you like just plain waffles, these are pretty good. I tried the recipe even though I didn't have to because just looking at the ingedients told me they were nothing special. I add vanilla and a hint of cinnamon and change things up by adding blueberries or cranberries or whatever sounds good at the moment to the batter.

Christmas Meatballs

These were pretty good. However, I baked the meatballs until 3/4 done then slow simmered them in the sauce. Microwaves are for heating leftovers...not cooking.

The Humble Shepherd

I think I'll try a meatless version of this on Thanksgiving since there will be plenty of meat already with the turkey. I'm leaning towards making this as a substitute for stuffing...but still giving it a stuffing-like flavor.
